Tater Crisp Chicken

Definitely add some seasoning and parm. Overall, easy and different than the same old chicken. I did a few pieces with no butter or egg and they didn't brown as well. They tasted fine, but I think the butter gives a little flavor and seals juices in a little more. I don't use much, maybe two TBSP for eight tenders/drumsticks.

Mild Cheesy Chicken Enchiladas

Easy! Cheese/Sourcream sauce is delicious! I added black beans and spinach to round out the food groups. Also poured a can of mild enchilada sauce first, then the cheese sauce on top. A new favorite for sure!

Slow Cooker Baked Beans

Vegetarian version-- Flavor and color were great. They did dry up after being on warm setting during our party. I didn't use hamhocks, but added a dash of liquid smoke and worcestershire. Also replaced 1/2 water with 1/2C vegi stock. Used 20oz of beans. Still thought there should have been a little more liquid. Cooked for about 4.5 hours after soaking beans overnight.

Peanut Butter Apple Dip

The flavor was pretty good. The dip didn't look very appetizing after sitting out for an hour or two. It wasn't the biggest hit at our party. People tasted it, asked what it was and moved on to something else. Might be a better hit with kids?

Awesome Baked Sea Scallops

My husband loves this dish! I didn't have shallots the first time, but it was still delicious. I add a little garlic powder to the butter mixture. I also add a few shakes of parmesean cheese to the bread crumbs. I made the recipe in a small ceramic baking dish with a single layer of scallops. The large sea scallops make it a great dish because each one has its own layer of crumb topping. Really fast, easy and delicious! Thanks for a great recipe!
