Spiced Pumpkin Seeds

Awesome! I was in a hurry and found this recipe. After reading several reviews, I tweaked the recipe by doubling the spices with the exception of the Worcestershire sauce, and I also subbed the margarine with olive oil. I only had to bake this for 50 minutes at the recommended temperature. My hubby and I can't stop eating them!

Microwave Corn on the Cob

I never microwaved corn before with the exception of purchasing frozen corn in the supermarket. This is an excellent, no-nonsense way of cooking a few pieces at a time when you are in a hurry. The only trick is adjusting the time amount if you have a more powerful microwave. I got away with 3 minutes for one ear.

Grilled Zucchini II

Very, very good and simple! I cut the slices in thicker pieces as I had a monster sized zucchini that fed us for 2 different meals. Therefore, the cooking time on the grill was a bit longer. Afterwards, I threw the slices in a large foil pan and drizzed some pecorino romano cheese on each piece. I covered the pan with foil and throw it in the oven on 170 while we grilled our main course. The steaming process further cooked the zucchini slices and melted the cheese. Next time, I will be a lot more generous with the cheese amount as it really complimented the dressing marinade.

Ginger Glazed Mahi Mahi

Great dish -- the only thing I changed was the method of cooking. I used my griddle and sprayed each side of the fish with vegetable oil Pam. Therefore, I was able to cook the marinade on the stovetop while the fish was on the griddle.

Spicy Peach-Glazed Pork Chops

After reading all of the wonderful reviews, I hate to be a spoiler. However, the combination of these spices along with the sauce did not appeal to me. I must say that the chops came out very moist and tender, but I just didn't find the taste all that appealing.

Clam with Tomato and Rice Soup

After reading the reviews, I tweaked the recipe to my own thoughts. I doubled the amount of clams and also subbed the one cup of water at the end with an 8 oz. bottle of clam juice. I had no problem with the acidity of the tomato sauce. Best new soup recipe that I've come across in quite awhile!

Stuffed Pork Roast with Herb Seasoned Artichoke and Mushroom Stuffing

I'm sorry. The stuffing calls for way tooooo much butter and broth. It came out like soup. The stuffing oozed out of the roast while cooking(even though I tied it like crazy), and the meat lacked any kind of special flavor. Once the meat was cooked, the stuffing itself became dried out. I was extremely disappointed.

Grilled Lamb with Brown Sugar Glaze

This rub is fantastic! I served this dish with Orzo w/Parm & Basil as a side (also on this site) which complimented the flavoring of the lamb. I'll definitely use this recipe again and again!

Fabulous Zucchini Grinders

Awesome sandwiches! Took the advice of adding some onion, green pepper and cooked in olive oil for extra flavor. I made a larger batch, and the mixture even tasted better the next day. My husband couldn't believe this was a meatless sandwich.

Slow Cooker Pork Chops II

I did not like this recipe at all. By judging the ingredients, I thought it was going to turn out wonderful. I did cut down on the amount of olive oil because I thought it to be a bit much, but unfortunately that didn't even salvage the recipe. The end result was very greasy, the flavor was gross and the chops were dry (even though I basted). Sorry!

Italian Roast Beef I

Outstanding! I cooked the roast in my crockpot on low for 5 hours and added 3 cups of beef base. After the gravy had a chance to cool down, I strained the liquid through a fat separator, thinly sliced the beef and let everything soak overnight. The next day I had one of the beef Italian Beef sandwiches I ever had! Thanks Michelle!

Cuban Black Beans II

Yum! I followed the recipe without changing a thing (used the dry beans). Absolutely wonderful over a bed of steamed, long-grain white rice! I had no problem with the amount of water as the beans soaked it right in -- you have to let this dish cook for the amount of time that the recipes calls for.

Hamburger Soup I

Apple Radish BBQ Ribs

Incredible! With the unforgiving weather this weekend, grilling wasn't an option and my tastebuds wanted ribs. I think this recipe rendered some of the tastiest ribs I've ever made even though it's a boiling/oven method. It's a no-brainer to make and a "keeper"! Just may cut down on the amount of BBQ sauce the next time as there was too much.

Slow Cooker Chicken Parisienne

This was a decent recipe for the slow cooker. I might try to use boneless/skinless chicken thighs the next time because the breast meat was a bit dry. I had leftovers and it did taste better the next day after I shredded the meat and let it soak in the sauce. Per another reviewer, I sprinkled the chicken with some Emeril's Original Essence and ground pepper. Went great with a side of mashed potatoes.

Cowboy Skillet Casserole

For a quick, hearty meal on a week night, I HAVE to give this a five star rating! It was so easy and such a comfort food on a cold winter's night. I'm glad that I read the submitter's additional post regarding the adjustments. I only used 1 red bell pepper (chopped up small) and added a can of corn. I also used 3T of cajun, creole seasoning. Will make again as I always need ideas for a quick meal during the week! Thanks Mozibway for your submittal!

Slow Cooker Mashed Potatoes

Excellent! I had to bring a side dish, and I knew the place where I was visiting was going to short on oven space. I even made these (fully cooked on low for about 1 1/2 hours) the day before. When I got to my destination, I reheated the crock pot insert in the microwave, and then set it up on low in the crock pot for about an hour. The only thing I added was some minced onion to the potato mixture once I mixed in the butter, salt and pepper. Eveyone raved about how good these were. Thanks for the post!

Heavenly Pink Salad
