Abbey's White Chocolate Latte

OMG, thank you so much for this recipe!!! I have an espresso machine with a steaming wand, so I used that to steam the milk and chocolate chips until they melted and the milk was nice and hot. I added a bit of Vanilla and then brewed two shots of espresso into my humongous mug! I didn't add any extra sugar, because I don't use it in regular coffee and didn't want the drink overly sweet. This is the perfect drink on such a cold day like today.

Fried Bologna Casserole

This recipe is awesome! So easy to make, and just perfect comfort food on a rainy day. I had some garlic Bologna and used roasted garlic instant mashed potatoes. I didn't have any cheddar cheese but wanted to make this meal anyway, so I used Mozzarella. It still turned out yummy. I can just imagine how great it might taste with Cheddar. My small kids ate everything on their plates, this will definitely be a meal we'll cook often.

Iced Coffee

This recipe rocks!!! Ever since I got my own automatic espresso machine, the trips to Starbucks for hot coffee became unnecessary. But every once in a while I really crave the frappuccinos! This iced coffee is awesome. I use fresh brewed espresso instead of the instant coffee, but otherwise no other changes. It is a snap to prepare in my Magic Bullet. You've just saved me lots of $$, and I'm sure this will be a huge hit with my friends this summer. I will also change this up and make it with caramel sauce instead of chocolate. Thanks!

Cosmo-Style Pomegranate Martini

Yummy!!! I'm enjoying one right now and it's awesome. I do like my Cosmo's a bit more sour so the pomegranate and lemon combo is just perfect. I used just plain top shelf vodka, otherwise followed recipe exactly. I will definitely be making this one again!

Cosmopolitan

These are great! I just made it to test out before I have some friends over. I had Ciroc vodka on hand and also used Light Cranberry Juice. Next time I'll try the Roses Lime juice like others have suggested. I definitely recommend using a quality vodka like Grey Goose or Kettle One - that makes all the difference!

Angel Hair Pasta with Shrimp and Basil

This recipe is awesome!!! I made it twice within the last week and it was great both times, even though tonight I added diced tomatoes with green chillies by mistake! It had a bit of a bite, but my toddler still gobbled it up. The only thing I do differently is to puree the diced tomatoes a little, since I prefer my sauce less chunky. This one is a keeper!!!

Fruited Ice Cream

This is the easiest and best ice cream recipe I've tried. I used my blender to combine all of the ingredients, but I used cherries instead of strawberries. I only blended those for a little bit at the end, which gave the mixture a great color and still left pieces of cherries in it. I left the mix in the fridge overnight and made the ice-cream the next day. Hubby really like this one as well!

Quick and Easy Alfredo Sauce

This was so easy and tasted great!!! I added some Nutmeg and served the sauce over Linguine and grilled chicken strips. I will definitely make this again and might try the lower fat version that other reviews have suggested.

Shrimp Scampi Bake

Baked French Toast

I love making this recipe and it's allways a big hit. I bake it in a larger dish and usually use Challah bread sliced at least 1" thick. I never have problems with it being soggy. Sometimes I mix in some frozen berries as well.

Oven Brown Rice

I used a store bought "Royal Blend Texmati premum rice mix" (mix of basmati, white, brown, wild and red rices). It turned out great and was very easy to make. I baked it a bit longer to allow all the liquids to cook out and also because I like "crispies"!!!

Award Winning Soft Chocolate Chip Cookies

Broiled Tilapia Parmesan

Lemon Pepper Pasta

This was a great side dish to go with Broiled Tilapia Parmesan also from this site. I cut down on the lemon and used half regular olive oil and half garlic flavored olive oil. Will definitely keep in my recipe box.
