Old Fashioned Onion Rings

These were really good. I see why they tell you to put crumbs in plate. I tried to expedite things and do the shake-in-a-bag, and ended up with a lot of stuck-together crumbs at the end, but the rings that did get crumbs were terrific. Also, I baked them at 350 and flipped after 10 minutes and then left in another 15 minutes or so. My husband LOVED them. I will try the Panko next time. :)

Barbecue Ribs

I made these one week ago wtih spare ribs as called for in the recipe, and they were really good, but didn't love the spare rib part of it. I made them again this weekend with baby back ribs and they were amazing!!! I may have used slightly less rum due to quantity on hand, and I did use Denise's dry rub on this site before baking, but everything else just as called for in recipe. They taste like they were professionally cooked at a restaurant. My new favorite rib recipe!!

Quick and Almost-Professional Buttercream Icing

I had a frosting disaster yesterday when I tried to make seven-minute frosting that is cooked....big mistake. I needed something quick to save my husband's coconut bday cake, and this was the one. Instead of vanilla, I used coconut extract. I was even out of butter and used margarine and it was perfect!!! Love the consistency. I doubled the recipe and frosted the top and sides only of a nine-inch cake and had a little leftover. Yum!!!

Pumpkin Gingerbread

I have been baking this bread for a couple of years, but never reviewed it. It is delicious! I substitute half of the oil with applesauce, and it is very moist. I also use 2 cups of brown sugar and 1 cup of white, but will probably try cutting out some of the sugar next time. I always make mini loaves and give them as holiday gifts; this time I added chocolate chips in some loaves and pecans and dried cherries in some loaves. You can't go wrong with this recpie.

Pumpkin Spice Cake II

Yummy!!! I also did 1/2 cup oil, extra cinnamon (1/2 tsp), used egg substitute and only used about 1 cup of pumpkin. It is so good, spicy and light. Definitely will make for Thanksgiving.

Downeast Maine Pumpkin Bread

This bread is delicious! Last time I tried pumpkin bread, I really did not even like it. I wanted to try some again since everyone always raves about it. So I picked this recpie and the spices in it make this so good! Even my picky 3-1/2-year-old likes it! The only change I made was to use 1 cup brown sugar and 2 cups white sugar instead of the 3 cups of white. I will definitely make this for Christmas!!

Easter Egg Nests

Everyone loved these. I followed the recipe, but after adding the chocolate, it looked dry, so I added two more ounces. Next time I would stick with the 6 oz. They are still great, but you don't get that nesty coconut look with extra chocolate. It's more creamy then. These are so cute for Easter. I wrapped individually with colored celophane and a bow, and they looked great. Thanks for the recipe!
