Creamy Chicken and Wild Rice Soup
I sauteed about 2 stalks of diced celery, about 3/4 cup sliced baby carrots and about 1/2 of an onion and a couple of cloves of minced garlic in a few tablespoons of butter before I added the broth. Very tasty! I also used 1% milk instead of the heavy cream and it still turned out very well. I think I will try half-and-half next time, just to see the difference. This is a simple, comforting and very flavorful soup and has earned its spot on the family recipe rotation.

Suzy's Mashed Red Potatoes
Very yummy and simple recipe! My 2 year old, who has to be told that mashed potatoes are "grits," ate a full serving of these. The only thing I did differently from the recipe was add a dash of garlic powder and a little shredded cheddar, just to suit my husband's taste.

Brown Rice and Black Bean Casserole
I added extra rice to the recipe, as per other reviewers' suggestion, but I found that the casserole didn't want to hold together and was very dry. I also didn't have any cayenne pepper on hand, so I used chili powder instead. There wasn't a lot of flavor as a result. I think that when I try this again (and it's worth another shot) I will add a can of Ro-Tel or diced tomatoes. It seemed to me that this recipe was screaming for some tomatoes. Overall, a yummy combination of flavors.
