Suzy's Mashed Red Potatoes
Very yummy and simple recipe! My 2 year old, who has to be told that mashed potatoes are "grits," ate a full serving of these. The only thing I did differently from the recipe was add a dash of garlic powder and a little shredded cheddar, just to suit my husband's taste.

Brown Rice and Black Bean Casserole
I added extra rice to the recipe, as per other reviewers' suggestion, but I found that the casserole didn't want to hold together and was very dry. I also didn't have any cayenne pepper on hand, so I used chili powder instead. There wasn't a lot of flavor as a result. I think that when I try this again (and it's worth another shot) I will add a can of Ro-Tel or diced tomatoes. It seemed to me that this recipe was screaming for some tomatoes. Overall, a yummy combination of flavors.

Baked Macaroni and Cheese with Tomato
Very delicious! The only mildly off-putting aspect of the recipe is the color of the macaroni -- my husband called it Cheetoe-Mac. I followed the suggestion of another reviewer and added 8 oz of softened cream cheese and loved the result. This is definitely on my "make-again" list.
