Sea Foam Salad

This tastes really good and came out great considering I used this recipe for the ingredients and another (same recipe variation) for prep directions. The other recipe called for putting the fruit into a blender. I then added the dissolved Jello, chunk-ed up cream cheese, and blended until smooth. Then I folded the mixture into the whipped topping. Poured it all into one of those jello-molds, whiched I sprayed with Pam. My husband and kids all looked at me funny when I set it down after dinner but stopped when they decided it tasted "really good!".

Alaska Salmon Bake with Pecan Crunch Coating

We eat salmon frequently so I like to try new recipes. We thought this was excellent! Since the kids were non-stop yapping I accidentally added 3 TBS honey rather than what the recipe specified but it turned out absolutely fine. I didn't fully melt the butter so when I mixed the mustard and honey in, the mixture wasn't too runny upon spreading and I was able to pat the crumb mixture on without having anything run off the fish. This joins my collection of other great salmon recipes!

Parmesan Spinach Balls

Sorry, but I guess I expected more out of this based on the reviews. I sauteed a shallot in some butter, and used freshly grated parmesan cheese. I used store-bought breadcrumbs - maybe I should of made my own.

Salmon with Dijon Cream Sauce

My rating is 3 stars though my husband gives it 4 stars but since I'm the cook... after having read the reviews I made some changes... I skipped the sour cream, used a bit of white pepper and lemon pepper, along with the dill to season the fish. Baked it at 350 degrees F for the time specified. It came out moist and nicely seasoned. The sauce, well... I cut the flour down to 1/8 cup (which gave a decent consistency), ended up adding another tablespoon Dijon mustard and 1/4 teaspoon salt to the sauce for more flavor. Maybe a little more wine next time... I'm not sure, it needed a little something more.

Crescent Cake Cookies

These were really good! I also didn't have to chill the dough. I did only two things differently - added more extract, both almond and vanilla - 1/4 tsp. each, and rolled them into balls. I could of eaten the whole batch myself... it was work not too!

Mom's Macaroni and Cheese

We really enjoyed this Mac & Cheese! Usually my husband and I have an adult version I make and the kids have the packaged Easy Mac. This worked for everyone. The only changes I made were - a hefty 1 1/2 cup combo of shredded medium cheddar & meunster cheese, 8 oz. cubed Velveeta, and a 1/8 tsp. dried mustard powder, and used Panko breadcrumbs. Thanks!

Glazed Almond Bundt Cake

I made this to go along with the traditional Thanksgiving desserts. It got rave reviews from those with a more "sophisticated" taste! I only gave it four stars since the little I had leftover seemed to lose its "moistness" if not eaten up fairly quickly.

Salmon with Brown Sugar and Bourbon Glaze

After reading previous reviews, I sprinkled each filet with salt, used a combo of half butter and olive oil, and cooked the fish over lower heat than stated. Turned out great!! Will certainly be making this again!

Banana Oatmeal Crumb Cake

Had some bananas heading south so decided to try something other than my usual banana bread recipe... wasn't impressed. :o( Sorry. I guess after reading the reviews my expectations exceeded the actual results. I ended up scraping off the topping (it was what rated the three *'s), sprinkled it over vanilla ice cream, and drizzled with caramel syrup - the family liked that!

Pour-A-Pan Pizza

Made it for pretty much the same reason the recipe submitter did. My 4-year-old son liked it, the rest of us thought it was just okay. The only substitution I made was not using the sausage and added mushrooms. It reminded me of a puff pancake, except savory, of course.

Beef Stroganoff III

This is excellent!! Growing up, my favorite birthday meal was Beef Stroganoff made lovingly by my dad. I made this using a previous reviewers suggestion of adding some fresh garlic and Worcestershire sauce. I also replaced the canned mushrooms with fresh and before serving sprinkled a bit of parsley over the top. I served it over brown rice. Thumbs up from husband too! Thanks!

Double Cheese Casserole

A few days ago I had some dairy products that I wanted to use up so after doing an ingredient search I decided to give this one a try. I thought it would go over well with my toddler, but unfortunately I've still got leftovers. In hindsight I should of used the Parmesan as suggested as a topping or come up with something else because it seemed to be lacking something. Sorry.

Oma's Cottage Cheesecake

I really like this, it'll never replace a cream cheese cheesecake but what a great alternative to a really high fat cheesecake! I didn't have graham cracker crumbs so I substituted Trader Joe's LOWFAT CATS COOKIES FOR PEOPLE which are a cinnamon flavored animal cracker (so I omitted the cinnamon called for in the recipe). I just threw them in the blender. I also substituted lemon extract for the vanilla (just to try it). I then baked the cheesecake in a pie plate rather than the 8-inch pan. Thanks for a great recipe, a definite keeper!!

Enchiladas Suisas

The first time I made this recipe I'd only have given it four stars but didn't want to rate it until I tried it a second time and made some changes as other reviewers did. I added a half teaspoon of cumin to the salsa verde. Skipped the frying of the corn tortillas and just softened them using the microwave. Used half-and-half and combined it with the remaining salsa verde before pouring over the enchiladas. Enjoyed it very much!! Thanks!

Chicken Enchiladas V

My family really enjoyed this, the sour cream flavor is very nice. Instead of "rolling" enchiladas I made it "casserole" style. I ended up using only four of the tortillas (used two for each layer) and doubled the amount of cheese, using half as a layer in the middle of the casserole and then as the recipe says sprinkling the rest on top. Thanks!

Mother's Day Pie

Very nice! Found this after doing a search to use up some coconut. After reading the other reviews and noticing that a few commented on the filling being runny and the bake time being too short, I dumped in an extra cup of coconut and baked for 45 minutes. Set perfectly and a whole lotta coconut to enjoy!

Green Pepper Pork Chops

Put in a search for "pork chops, onion, and green pepper" because that is pretty much what my cupboard had left in it this afternoon and I was in a lazy mood so a trip to the supermarket wasn't on the radar. I'm glad this recipe came up! I did follow the recommendations of a few of the other cooks and added the extra seasonings both to season the chops and the gravy, as well as using butter to saute the onions. I thought it was alright though my husband really liked it so I'll put it in the keeper file. Thanks!
