Chicken Enchiladas V
I used this recipie also as a base and made a few minor changes. I parboiled the chicken in chicken stock and then shredded it instead of chooped. I added a few tbps of green chilis to the soup mix as well as my enchilada sauce. I added about 4tbsp of soup/chili mix to the chicken to keep it moist and follow the remainder of the directions. Once all the tortillas were in place, I poured over the remaining soup mixture along with some red enchilada sauce and the remaining chilis. Then sprinkled a fair amount of monteray jack cheese for the extra kick! Turned out great! Thanks for posting the recipie!

Cheddar Cabbage Casserole
This was a good recipie for my left over cabbage. I didnt have any corn flakes crumbs on hand so I used bread crumbs instead. They worked just fine, however I found that I would cut the amount in half next time as it was too much. My skeptics actually enjoyed the side dish and hate cabbage so it was a good verdict. Will use again.

Scalloped Potatoes I
Everyone just loved this recipie! I added one can of cheddar soup and one can cream of mushroom to give it a kick. I also layered some cheese along with the soup mixture instead of just putting it on the top of the casserole as my guys love cheese. I ended up cooking it for another 10 mins and put it under the broiler for 5-8 mins to make the cheese bubble and harden up a bit as we like it that way. Thanks for the tips!
