My favorite things to cook
I love good ol' southern food, so anything that is "comfort" food. All the gang in my house are very skinny - so, I love stick-to-your-ribs type food!!! Makes me feel like I'm doing my part as "mom"!!! lol.. With our big family we tend to be busy, so I really love crockpot recipes!!! My favorite is Beef and Beer Stew with Cheese bread!! Being from Texas we LOVE Mexican food, so another favorite (that I found on this site)is Shredded Beef for Tacos.
My favorite family cooking traditions
I love making cookies for the kids, as an after-school surprise!!! I also love making big breakfasts on the weekends - makes me not feel so guilty as we're all grabbing stuff, while running out the door, during the week.
My cooking triumphs
My kids are sometimes picky eaters, but we have a 1 bite rule that has really helped over the years. They are eating and loving dishes now that I didn't ever think they would. So, if I cook a recipe that the majority of them love - that's a real triumph!!!
My cooking tragedies
One night I was making some sauce, while talking to friends that were visiting and not really paying much attention to what I was doing. I think I was suppose to put in cornstarch to thicken the sauce, but put in baking soda instead. It was like a science experiment gone wrong!!! It was bubbling and over-flowing all over the place!!! It was hilarious and very sad at the same time!!! I think we had pizza delivered!!! :(

Curried Coconut Chicken
Very good, but boy my house sure does stink!!! We even cut the curry by 1/2 Tbs. and it was fine. Thanks Roma for a great recipe!!!

Cuban Midnight Sandwich
Very good!!! 5 out of the 6 of us really loved this! My only problem was that I probably added too much of the mayo! My sandwich kept sliding apart!!!

Burgundy Pork Tenderloin
Good, but not great! Pork is very tender, but the sauce could be improved. Lacking in flavor and never thickened up.
