Spinach Almond Pesto
Awesome pesto recipe. I had no idea pesto could taste this good without basil. I didn't have any almonds in the house, so I substituted toasted pecans. Otherwise, I didn't change a thing and the pesto came out great.

Summer Squash Pizza Crust
I actually thought this was too flavorful as a pizza crust (unless you are just topping with sauce and cheese). It would be great cut into long strips and served as a breakstick-type item.

Mediterranean Barley Salad
Diced green pepper and red onion made great additions to this recipe. Better after 1 day once the flavors meld.
