Sugar-Free Maple Cookies
These cookies are awesome! I made them for my husband, who is carbohydrate-intolerant, and he loved them, as did my children. The consistency is very light and fluffy, more like a muffin. I used Whey-Low for the sugar sub, and it worked very well. Don't expect a really sweet cookie; I added about a tablespoon of honey in the second half of the batter/dough, and that added a good flavor and a bit more sweetness, as did spreading honey on top of them. Warm right out of the oven, these cookies are wonderful--especially for a sugar-free cookie! I've tried a lot of SF recipes, and these are the best cookies I've ever made. Thanks for a wonderful recipe!

Todd's Famous Blueberry Pancakes
These pancakes were fantastic! My kids are requesting them every couple of days! The recipe worked well as is (except I halved the baking powder as some other people suggested), but I've made it several times since and have tried a few new things, including substituting oil for the butter, adding about 1/4 tsp. cinnamon, using 1/2 whole wheat flour, and pouring them right away instead of waiting an hour. They are great every time--doesn't matter what changes I make. Thanks for the great recipe!

Red Enchilada Sauce
My family and I absolutely loved this recipe. I was a little skeptical about the oregano and basil in it--that seemed more Italian food than Mexican to me, but it turned out so good! We ate it with black beans and rice and it was awesome. Thanks for a fantastic recipe!
