Baklava
I am not new to cooking in general but this was my first attempt with phyllo. I had to bring a few things to a greek themed dinner party. I followed several suggestions including 1 and a half times the syrup - added a cinnamon stick and let it simmer two hours and used a spritzer bottle to get the butter on the sheets. Everything went great except two operator errors. I hate over chopped nuts so I carefully chopped my pecans so they would not turn to dust. That was a mistake - they need to be WELL chopped. Next time I will use my handy chopper and will let it go to town. The second error was that I did not use enough butter. That spritzer made that butter go a very long way - I probably only used 1/4 cup. It was quick and handy but between my pecans being too large and my sheets not getting gooey enough - the baklava did not stick together correctly. Even with my goofs, they were beautiful and all 8 adults ate theirs and complimented them - and the hosts teen aged son came back to get them over and over until they were almost all gone. This is a remarkably good recipe.

Easy Mint Chocolate Chip Ice Cream
Excellent ice cream! We followed the recipe precisely - except that we found a new favorite use for candy canes! We put 20 or so mini candy canes in the handy chopper and YUM! We highly recommend trying this recipe :)

Janet's Rich Banana Bread
OUT OF THIS WORLD! I mashed up 3 banana's and - I had some streusel topping(left over from an accidental mix up of a cinnamon roll filling)that I layered in - I put about 1/2 the batter - then 1/3 cup streusel, then 1/4 of the batter, then another 1/3 cup streusel, then the rest of the batter, then I drew an S shape with a knife to swirl it a bit. Visitors to the house that day were in awe. It was truly the best quick bread I've ever had. (The streusel was about 1/3 of the filling recipe from "Cinnamon Rolls III")
