Out of this World Turkey Brine
It was a big hit at our house. Even my 20 year old daughter who doesn't like turkey said it was good. My 75 year old mom said it was one of the best turkeys ever (and she's had a few turkeys!). The turkey was a 23 lb one (NOT pre brined in any way), soaked in a big plastic bag inside my huge stock pot for about 36 hours then washed in cold water and set in an icy water bath for about 15 minutes before cooking. Previous reviewers were right about the gravy from the drippings though - I like salty gravy so I thought it would be o.k. - but I was wrong - way too salty. Oh well, that gravy will be great in the soup! Thanks for the recipe!
