Eggplant Parmesan II
This was really good and I will make it again. Perhaps next time I will cook longer than the alotted time as it was a little firm. Leftovers would make a great sandwich- if there were any!

Basic Ham and Bean Soup
I had to cook the dry beans WAY longer than the hour stated in the recipe- more like overnight in the slow cooker! I also added chick bouillon and other spices as I felt the broth was a little bland.
