Microwave Chicken Parmesan/Chicken Breast Cacciato

This was not good. The microwave technically cooked the chicken, but it came out white and clammy and totally unappetizing. Will revert to the stovetop method next time.

Unbelievably Easy and Delicious Vegetarian Chili

This is a very quick and easy recipe. I made it with three alterations: I sauteed the onion with two cloves of garlic in the same pot before adding the rest of the ingredients. I used canned whole tomatoes, since I had those on hand. I also left out the veggie crumbles, since I couldn't find them at my grocery store. The flavors were great, but a little intense for me - I think that next time I will use half a pack each of ranch mix and taco mix, and it will be perfect. But the easiest, tastiest chili recipe I have found yet.

Chickpea Salad with Red Onion and Tomato

Great, versatile recipe. This was a bit bland when I first made it, but by the next day, all the flavors had married and it was delicious. You could definitely add additional vegetables, too.

Pumpkin Ginger Cupcakes

Wow! These are amazing and easy to make. I halved the recipe, and made mini cupcakes instead of full sized ones (adjusted the baking time down to 16 minutes). I also didn't have any cloves, so I left them out - they were still delicious! Might try adding some nuts to the batter next time, but will definitely make again.

Roasted Garlic Lemon Broccoli

This was really good, and so easy. I steamed the broccoli in the microwave, then added garlic powder (generous shake), salt, pepper, and juice of half a lemon. I skipped the olive oil, and it was fine without. It was really delicious, super fast, and very healthy.

Marinated Flank Steak

Creamy Italian White Bean Soup

Pretty good. I found it a little bland, even though I used the juice of half a lemon and zested the lemon rind as well. If I had to do it over, I would increase the garlic and thyme as well. I also used an entire bunch of fresh spinach, and it was WAY too much (and I love spinach)...I was getting whole mouthsful of nothing but spinach, so better to cut that in half. But tasty overall, and will make again with alterations.

Tortilla and Bean Soup

This is absolutely delicious. I made a couple tweaks - used hot turkey sausage instead of chicken, substituted chicken broth for water, and corn for hominy. It was very quick to make. I saved time by cutting the sausage into pieces before cooking in broth, and then followed instructions from there. Very tasty and delicious.
