Lazy Lasagna II

This is really good. I've had this recipe for years. I double the sauce and add garlic. I also cover it. It's very yummy!

Best Egg Rolls

These were great. I added Asian seasoning and a bit of Oyster Sauce. I did not do the flour mixture, but just wet the ends with a little water. Also, I BAKED them in the oven at 425 for about 12-15 minutes. Be sure and oil the pan (mine stuck) :( I did not use oil b/c I read if you do not add oil on them they will be crispier out of the oven. Next time I think I will add some green onions (I didn't have any), hot chili paste, and fresh garlic. I really liked the Ginger in it! Thank you for the recipe!! (PS ~ I also used a leftover pork chop. I chopped it up finely with my handy chopper tool!)

Pasta Lasagna

Hmmm...mine needed more sauce. The pasta soaked up all the sauce. It also needs more flavor. I think I would make this again with adjustments like garlic and Italian seasonings and maybe more mozz. I would use spaghetti next time too. I found the penne to be somewhat heavy for the dish and I think it would be easier to "spread" the layers w/the spaghetti. I also subbed sausage for ground beef b/c that's what I had in the freezer already cooked...My 10-yr old said "it's pretty good" :) Oh PS ~ I covered mine too. Thank you!

Penne Pasta with Spinach and Bacon

This was good, but needed some flavor. I used precooked bacon slices. I added the garlic in with the tomatoes and simmered them a bit. Just before serving I threw in the spinach to let it wilt. I also added a couple of dashes of red pepper flakes, a little salt and pepper, and Italian style cheese blend on the top. THEN it was really yummy!! I could eat the tomato/bacon mixture all by itself :) Thank you for the recipe!!

Refried Beans Without the Refry

These are great! I used a whole jalapeno and onlly 3 tsp. salt. I also added 2 slices of bacon; cooked them in a slow cooker for about 8+ hours. They were delicious the way they were w/out mashing them too! I portioned them into freezer bags and froze them. Thank you so much for the recipe!

Steak Hash

This was very yummy. I had to really season the potatoes though. Next time I make it I think I'll chop the bell in larger pieces. I also think it would be better with the sliced potatoes on the bottom (w/peppers and onions) and the meat on top and then the egg...or maybe dice the potatoes instead of sliced. I used leftover ribeyes and it tasted great! Thank you!

Maple Bacon Pancake

This is super easy and yummy! We make it for brunch a lot. The first couple of times it took a LOT longer than the recipe states, but after I used my larger pie plate, it's just about 20 minutes. I also mix the bacon in with the batter as well as on the top at the end. We have used sausage too, but we like the bacon the best. Also, I like syrup on top of mine, but the boys like it as is. Thank you for the recipe!

Best Lemonade Ever

I've been making this for over a year now at least. It's my "go to" recipe and I have it memorized :) We drink it everyday even in the winter now! I don't add 8 cups of water...more like 6.5 to 7. We like it on the tart side so when it's over ice and the ice melts, it's just perfect!! Oh ~ PS ~ I just use Splenda and it comes out wonderful too! I think it's better the longer it sits.

Spicy Corn Dip

I wish I loved this dip as much as everyone else. I thought it was just a werid combination of ingredients. Hubby liked, but I don't think I'll make it again...ps, used cream cheese instead of mayo b/c I don't like the tanginess mayo can give a dip.

Meaty Spaghetti Sauce

FANTASTIC! Even thought it's still 90 degrees here, I was in the mood to cook some "fall" comfort food. Hubby works at an Italian restaurant so I don't get to cook pasta at ALL :( He closed tonight so cooked this for my son. It was fantastic. I added a lil more broth than called for and more garlic, of course :) You have got to let it simmer for at least a couple of hours. 'm thinkin it's going to be even better tomorrow!

Rajas Poblanas (Poblano Strips)

I had purchased some Poblanos b/c they were on sale and wanted to do something different with them. I was just thinking "dip" when I made it, but after I made it (it was thicker than I expected) it hit me to add some chicken and made some enchiladas! I also added some jalapenos for some heat (Poblanos don't have "heat") and some SW seasoning. I made a simple cream sauce (using the Poblanos, chopped) topped it with some cheese and it was FANTASTIC!! Great for something different! Thank you for the recipe!!

Marinated Chicken Wings

I have been doing this marinade for a while now. We always just bake ours in the oven and then hubby grills them to crisp them up. I've never marinated them b/c we put our favorite hot sauces on them afterwards. WE LIKE IT HOT!! Anyway, after seeing this, I was curious so did it. They were really tender and juicy. We still put our various favorite hot sauces on them (my fav is Mango Habanero!) at the end and I do not bake them in the sauce, which I think probably is why they are so salty to people. I also have learned the longer you marinate them, the saltier they taste. Also, use low sodium soy sauce and I use about 1/2 of what it calls for w/a wee bit of Liquid Smoke. Chicken and Bacon Shish Kabobs

FANTASTIC! This is one of our favorite grilled chicken recipes! I like to add peppers and onions too. GR8! Thank you :) PS ~ I microwave the bacon for about 1-2 minutes before wrapping the chicken. Cooks up just right.

Mouse's Macaroni and Cheese

At first all I could think of was "mac n cheez soup", but after baking it (uncovered b/c I did NOT READ it carefully enough *SIGH*) it all absorbed. My only problem with it is the consistency is a little strange. It's not as creamy as I would have liked. It's almost like the cheese "broke down" after cooking; kinda almost grainy :( I don't know if not covering it had anything to do with it...my 9-yr old liked it though! Maybe I should make it again COVERED and rate it again ;) Thank you!

Puff Pastry Valentine Cookies

I was looking to use some leftover puff pastry I had from another recipe. I found this one. I took this idea and made valentine sopapillas. I sprinkled cinnamon sugar on them before and after baking. Honey (optional) on them also after they're done. They were a big hit! Thank you for the idea :)

Whiskey Marinated Grilled Pork Chops with Hot Green Bean and Potato Salad

These are fantastic! The best grilled chops you'll ever eat! You can leave out the red pepper flakes if you don't like the spice, but they are just in the marinade and you don't necessarily eat it. Also, you can play around with the green bean salad recipe...sometimes I make it sweeter and sometimes I make it tangier...you can also use the bacon fat instead of the oil. YUM :) Next time we make this I'll publish a gorgeous pic! ENJOY!

Andouille and Chicken Creole Pasta

Regarding the saltiness...I make my own Emeril's Creole Seasoning and cut the salt WAY DOWN, so it wasn't too salty for us...if you buy it, you might want to taste test it along the way...that being said, this was fantastic and I even added more heat with red pepper flakes and a dash of Cayenne (we like it spicy). My hubby manages an Italian restaurant and gets enought pasta THERE so I served it over rice. I used regular smoked sausage instead of Andouille b/c that's what I had and it was fine. GR8 cajun/creole recipe! Thank you!!

Bacon Ranch Pea Salad
