The Best Slow Cooker Cream Corn

This was pretty good. Mine needed more liquid. It's pretty rich (as mamamelton stated). I loved the ease of cooking it in the slow cooker and will probably make it again. I will add more milk possibly. Thank you!

Apple Crisp III

Outstanding! I used approx. 2.5 cups of sliced apples (all I had) and 1/2 brown sugar in place of 1/2 white. I also sprinkled some more cinnamon on the top before baking. Not very "crispy" really, but family loved it. Thank you!

Sweet and Sassy Pork Tenderloin

This was outstanding!! Great flavor. I followed the recipe to the "T" except I rubbed the pork pieces with some SW Rub I have and need to use up. I had NO problems with the sauce. It was just perfect. I served it with Garlic Mashed Potatoes and some Green Beans with Almonds. Hubby said it reminded him of something we would have at a restaurant! FANTASTIC! ~ Thank you!!

Andouille and Poblano Quesadillas

I accidently bought Chorizo instead of Andouille, but it worked out just great anyway. I added some minced fresh jalapeno b/c we like it hot! I also added some scrambled eggs in b/c I made it for a brunch. These were very yummy and a nice change of pace from our regular "brunch". Thank you! :)

Apple, Pecan, Cranberry, and Avocado Spinach Salad with Balsamic Dressing

I was looking for a quick lunch with ingredients on hand, including a grilled salmon piece, spinach, and an avacado I needed to use up. I used this recipe to make a scrumptious salad! (I didn't use the apple or pecans, but I did use everything else). I used the spray balsamic vinegar. It was easy and awesome! Thanks for the great idea! :))

Chiles Rellenos Pie

I was very excited about making it, but when it was done, it was disappointing. My husband even asked "What's in it?". We ate it, but the flavor was bland. Even with the flavor of the peppers, it needed something. I'm not sure what. Salt maybe? Some sort of seasoning. I seasoned the chicken with SW seasoning, but it wasn't enough, I guess. Anyway, it was fun to make, but I probably won't make it again. Hubby had a good suggestion about somehow stuffing a chicken breast with these ingredients and flavors. I don't know how you could do that since the liquid needs to be cooked to "set". If I make it again, I'll kick it up with some seasoning for sure. Thank you! :)

Carne Con Chilies

I had such high hopes for this recipe. I went to the store and bought special ingredients for it and everything. Unfortunately, it did not live up to my expectations. My husband's comment was "What is this? Tomato sauce?" :( I noticed the sauce got better the longer it simmered (I simmered mine on the stove for a couple of hours), but still was missing something. The meat was tasty though. Oh well, I might try it again, but shred it and use it for tacos or burritos with extras like sour cream and cheese.

Microwave Peanut Brittle

I had never made Peanut Brittle before, but after seeing it at a candy store and not wanting to pay $8 for it (I guess it's "seasonal" around here b/c I could not find any to buy anywhere else), I decided to make some myself. I followed the directions exactly. My microwave is 850 watts. It did not burn, however, I kept an "eye" on it while it was cooking just in case. The only thing I did wrong was put it on wax paper and it STUCK to the paper :(( I'm still trying to get it off. (I don't want to throw it all out) :) Be sure and use a greased cookie sheet like the directions state! Also, mine was not as dark as I would have liked, but I do not own a candy thermometer so this was an easy way to make it. It hardened up pretty quickly and was not chewy. Thanks for the recipe! I'm looking forward to making it again for the holidays.

Chicken Enchiladas II

This was a really great, simple recipe. It's different than my more complicated one I usually make with many more ingredients. Campbell's has a very similar recipe. I added Chili Powder to the onions as well as Southwest Seasoning. I also added SW Seasoning to the chicken. I also used REAL minced garlic and added more cheese. It was great to use up some leftover chicken that I already had cooked. I 1/2'd it, but I wish I would have made the entire thing b/c it was really yummy :) Thank you ~ I will make this again!

Bacon & Eggs Spaghetti

I am giving this recipe 5 stars because I made it for my very PICKY 7-yr old. (I don't think I would make it for adults b/c it wasn't very pretty, but tasted great!) I'm always looking for recipes that he would like b/c he's so picky. I used the Multi Grain Penne instead of Spaghetti b/c that is what he likes. I also added some pureed veggies in it with the cheese and egg mixture (of course he doesn't KNOW that!) Be sure and add a lil milk to the mixture too. I did not use the onions (for obvious reasons) but did use some onion powder. I also added some mixed Italian style shredded cheese. I sprinkled some more bacon bits (from the package) on the top with more of the Italian style cheese. Also, to the reviewer that stated something about "raw" eggs...the eggs cook faster than the cheese even melts, so no worries there. Anyway, HE LOVED it and we will be making this again. Thank you!

Mushroom Sauce Baked Pork Chops

This recipe was very good. I sliced the potatoes with a mandoline, so the cooking time was not a problem. I also seasoned the potatoes and added shredded cheddar on top of them before placing the chops on. I also "seasoned" my chops first in Worchestershire sauce and then Emeril's Rustic Rub. I added garlic powder to the sauce part as well as corn. I used creamed corn b/c that was what I had on hand. The sweetness of the corn seemed to add to the dish! I sprinkled a few bread crumbs on the top w/paprika for color. I also did not cook my 2 chops for an hour. I cooked them for 30 minutes covered and then about 10 minutes uncovered and turned off the oven and let them set for a lil while. All in all, this was a great recipe (even though I tweaked it a lil per other reviews), and I will make again! Thank you :)

Marinated Spicy Pork Chops

These were fantastic! I didn't have Chili Sauce, but added a little (a couple of "squirts") Cocktail Sauce ( BTW Cocktail Sauce is Chili Sauce and horseradish) I also 1/2'd the Soy Sauce with Worchestershire per other reviews and added a couple of shakes of Chili Powder. I also used real garlic as well as the powder. I didn't get to marinate them as long as I would have liked (about 2 hours), but they were really outstanding!!! My chops were double cut and very thick. I can't wait to try this again and marinate it even longer. Thank you for the recipe! It was just what I was looking for :)

Bacon Wrapped Chicken

This was a great recipe. My husband loved it. I did change it a little. added a couple of slices of fresh jalapenos inside also, as well as lotsa various seasonings. We like things SPICY! The "sauce" was too thin, but that's fixable. I served it with some cut up/diced roasted potatoes, mushrooms and onions for the side. Overall this was a great dish. I will make it again. Thank you :)

Six Can Chicken Tortilla Soup

This was very good. I added some ingredients for fear of it being "bland"...Velveeta and some leftover cream of chicken soup I had in the fridge to make it a little creamier. Be sure and rinse the black beans (it affects the color of the soup). I also added some Southwest seasoning to the chicken (I cooked chicken breasts. I did NOT use canned) as well as a wee bit to the soup too. I also added garlic and onion powder and Hasa Marina (corn flour) to give it more of a "Tortilla" taste. Shredded cheese and chips on the top is a MUST. I even put a dallop of sour cream on the top too. I have a copycat recipe for Chili's Chicken Enchilada soup and I like it better, but this one was very fast and easy. I would make it again. It was a hit! Thanks for posting :)

Authentic Huevos Rancheros

I don't know how "authentic" these are, but they were a hit with my family. I had all the ingredients and they were pretty simple to make. I didn't have refried beans w/green chiles, so I just added them into the beans before warming them. For my 6-yr old, I made him seperate beans w/out the chiles. My tortillas were VERY chewy...I don't know if I fried them too long, or not long enough, or if they were old. I also added SW seasoning and green onions on the top. I broiled them after they were assembled to melt the cheese, which I put on the top. (it doesn't say what to do with the cheese). Next time, I think I'll try them with flour tortillas, per my son's request, and maybe just use spray oil and/or butter like other reviewers have suggested. Jalapenos would be good too! These were pretty good. I will make them again...something different for dinner! :)) Thank you!

Chicken Wing Dip

This dip is awesome!! It's a little thick and not runny, which is a great change! I followed recipe to the "T" (I chopped the chicken breast up very fine using my Pampered Chef chopper.) It reheats very well too if you need to make it ahead of time. It IS VERY addicting and HARD to STOP EATING! ~ LOL ~ Can't wait to make it again and again! Thanks for this GREAT new idea! A welcomed change. :)

Smothered Green Beans

These were AWESOME! I used real bacon bits. I sauteed the onions, garlic and MUSHROOMS in butter (alot!), then added the bacon bits at the end. Added the green beans last and just let them simmer til dinner was ready! FANTASTIC and just what I was looking for. Thanks :)

Spaghetti Pie III

This was very yummy. I 1/2'd it and added a lil more sauce (after reading other reviews) as well as some Italian Sausage I needed to use up. I didn't have any green bell on hand and did not add green onions, however, added celery and onions to hamburger cooking mixture. Six-year old who doesn't like traditional "spaghetti" loved it. Will make again :) Thank you!
