Roasted Red Pepper Lasagna

Absolutely wonderful!!! I think this might replace my constant craving for regular old lasagna. Takes some time to whip up, if you are going to follow the recipe and roast your own peppers, but man, good eats. I added a diced onion to the peppers and garlic as it cooked, then threw in some parmesan cheese and red wine with the tomato mixture as it simmered. Used mozzarella cheese instead of just parm (and lots of it too!) and added a layer of provolone cheese as well. Using all fresh herbs really enhances this dish....I seriously thought it was delicious, as did my friend, and it had a beautiful presentation. Served with a simple Caesar salad and some toasted garlic bread.

Chinese Happy Family

Thought this was alright....I thought there would be way too many veggies after looking things over, and decided to go with a variety of sliced bell peppers and fresh baby bellas as opposed to the bag of vegetables. Served over rice, and although it was quick and easy, not sure that it made enough of an impression to make again. Thanks anyway!

Garlic Feta Dip

I thought this was spectacular! Dresses up veggies in a great way. I used tomato basil feta and all fat-free sour cream (omitting the yogurt altogether). I didn't experience the dip being too runny as others have commented on. Made both assorted slices of bell pepper and Fritos taste amazing. Thanks.

Mountain Man Stew

Yum Yum Yumo!!! I actually threw everything in the crock pot and came home to a glorious dinner. Added about a cup of frozen corn and used beef broth in place of the water/bouillion cubes. This truly reminded me of a dish my parents make with their roast leftovers (they throw it all together and call it hash) - and it's one of those meals I could never get enough of as a kid. Thanks, this was delicious.

Great Garlic Knots

Love that these are so simple and tasty. I bought the garlic flavored breadstick dough and then switched around the garlic and rosemary amounts. Will definitely make these again. Great change from regular garlic toast. Thank you.

Stuffed Pepper Soup I

The taste of this soup brought me back to my moms kitchen as this is exactly how her stuffed peppers taste. This was perfect for the cooler weather we've been having here, but I did do a few things differently. Used ground turkey in place of the beef, added one large yellow onion chopped as well as 2 heaping tablespoons of minced garlic, used 2 and a half green peppers (you really do need more than 1, trust me), replaced the bouillon cubes with a can of beef broth and towards the end I added about a teaspoon and a half of italian seasoning. Sprinkled sharp cheddar over bowl when serving and thought this was a hit. Froze most of it and I'm looking forward to eating this again come winter! Thanks!

Chocolate Monkey

Use Godiva White Chocolate liqueur in place of the creme de cocoa (see submitter's review) and you have yourself a real winner here. Also, for a nice presentation, use chocolate syrup to sort of line the inside of the glass before pouring in drink. YUMMY.

Oatmeal Chocolate Chip Muffins

Hmmm, not sure if this was something I did or what....made these last night and brought them to the office this morning for the guys. They all seemed to like them ok, but I found they had a funny aftertaste to them. Only changes I made was to use applesauce in place of oil and omit the pecans as I did not have them. Still used the brown sugar topping. They were excellent straight out of the oven...but, not sure I would try these again. Thanks anyway!

Pinwheel Italian Calzones

These were alright - I give them a 4 because the taste was there, it was just a little off IMO. I think using refridgerated pizza dough cut to size would make these much better - as to me, the cresent roll taste was what threw it off to me. I chose to saute the onions, peppers and mushrooms before adding it to the rest. Will try again - only use the pizza dough in place. Thanks!

Easy Mac and Cheese Muffins

Brilliant idea here!!! I made this simply to have something quick to pull for lunches during the week. I think the recipe itself is OK - makes a decent mac and cheese. Only thing I did differently was to add about 1/4C of sour lean to the noodles and cheese mixture - I feel it makes the mac and cheese nice and creamy - and some pepper. I left out the breadcrumbs as that always throws this type of dish off for me. Turned out good - and I appreciate the idea!! Thanks much!

Oh My Gosh Muffins

These were very good. I did do a few things differently - used applesauce in place of the butter (didn't realize I was out until I got ready to make these), used 5 very large and very ripe organic bananas as opposed to the cup called for (I really wanted a pronounced banana flavor), added a dash of ground cinnamon and about 3/4C of cinnamon chips instead of the chocolate chips. Brought these into work this morning to feed the hungry men in the office and they were gone in no time. Made jumbo muffins out of these - very moist and filling. Thanks for passing along your uncle's delicious muffins!

Hungarian Mushroom Soup

I can see why this recipe is in the cookbook! By far the best soup I have EVER made. I used all baby portabella mushrooms and added a green and orange bell pepper just because I didn't want them to go bad. I agree with others in that this does resemble the mushroom soup served up at Panera. Delicious - thank you for the recipe.

Daddy's Sausage and Peppers

In the words of JJ - this meal was DYNOMITE!!!!! I pretty much stuck to the recipe, only thing I did differently was to add onions, in slices, with the pepper mixture. I also used fresh oregano and fresh basil as opposed to dried Italian seasoning. After the final simmer, I stuffed everything into a toasted hunk of Italian bread, threw on a handful of Italian blend cheese (parmesan, mozzarella, romano and asiago cheeses) and broiled the sammy for a few minutes. I was stuffed after eating half and am happy with the fact that there was a lot leftover for freezing! Can't wait to dive back into this one. Thanks Amy, and thank yer daddy too!!!

Chicken Tequila Fettuccini

Yummy!!! I used FF half-n-half in place of the cream and dried cilantro as opposed to fresh - but thought this dish was fantastic. I messed up in throwing all of my peppers and onions in with the garlic and jalapeno mixture, but in the end it all worked out just fine. I also listened to some reviews and added more of the tequila/lime/cream for a saucier sauce. Ole!

Garlic Butter

Best Marinara Sauce Yet

Best sauce I have ever made - hands down. I did add more than twice the amount of garlic as well as fresh basil and fresh oregano (per the advice of ~TNT~ - thanks!) however I would add even more of the fresh herbs next time. Can't wait to make a large batch and freeze it. Thanks much for the recipe - outstanding!

Tail Burner Firehouse French Fries

The seasonings were soooooo great!!! I have to agree with others that the butter listed is way too much, so if making again I would decrease that tremendously. I baked these at 450 for about 35 minutes and then broiled them for another 7 or so to get them crunchified. Loved 'em - my thanks goes out to the firehouse!

Guacamole Cilantro Lime Cheeseburger

I thought these were really good - so many flavors to take in. I actually used cilantro in both the burger mixture as well as the guacamole (because guacamole just ain't guacamole without it!!). I would make these again - to change it up a notch. I did think the guac was outstanding - some of the best I have had and I plan to bring what's left of it along with me this weekend so my family can enjoy it too. Thanks much!
