Black Bean Avocado Salad
This is awesome! Due to personal preference, I omitted the corn, added finely chopped red onion, and exchanged the fresh jalapeno for a huge spoonful of canned diced jalapenos. Thanks!

Alaska Salmon Bake with Pecan Crunch Coating
This is awesome! I substitute olive oil for the butter. The coating freezes well - I quadruple the coating, divide it, and freeze it in zip locs to save time for future meals.
