Pork Medallions with Balsamic Vinegar and Capers
Easy to prepare and SO delicious! I only had raspberry balsamic vinegar, which complemented the lemon zest nicely.

Black Bean Avocado Salad
This is awesome! Due to personal preference, I omitted the corn, added finely chopped red onion, and exchanged the fresh jalapeno for a huge spoonful of canned diced jalapenos. Thanks!
