Mexican Chicken Corn Chowder

This turned out great! I didn't have any creamed corn on hand so I used 2 cans of kernel corn with some extra half and half and a touch of sugar. My 8 year old son says "it was one of the best soups ever!" Thanks for the recipes!

Classic Macaroni Salad

This was a great recipe. I didn't want it super sweet, so I used only 1/3 cup of sugar to start, and thought that was enough. I added the grated carrot, and omitted the pimento. I used1/2 green pepper and 1/2 red pepper as that's what I had on hand. It was a hit at my Labor Day BBQ. Will definitely make again!

Chicken Noodle Salad with Peanut-Ginger Dressing

This was a great dish. Instead of making it into a main meal, I left out the chicken and served it as a side to grilled asian chicken that I already had marinating for Chinese New Year. I added extra carrots and bell pepper to boost the veggie content, and left out the roasted peanut garnish to help lower the calories and fat. I plan on making it again soon with the chicken in the salad and serving it as the main course next time. Definitely a keeper in our house.

Summer Potato Salad

This was great! I served this yesterday for a family BBQ and it was a hit. I did make a couple changes: I used yukon gold potatoes, unpeeled. I left out the eggs as we are not fond of eggs in our potato salad. I also had to leave out the parsley as I didn't realize mine was past its prime, and I didn't have time to go to the store. Everyone loved the lemony taste and that it wasn't as "mayo-ey" as regular potato salad. Definitely a keeper!

Tomato Chicken Parmesan

This was delicious! I used mozzarella cheese instead of monterey jack. Instead of baking the cheese for the full 20 minutes, I baked the chicken and sauce for 15 minutes, then added the cheese for the last 5. Served over spaghetti with green beans, carrots and garlic bread. Definitely a keeper!

Greek Style Garlic Chicken Breast

This was delicious! I used about 6-7 cloves of garlic and about 1/3 cup of olive oil. I let it marinade for a few hours in the fridge and then grilled the breasts. Served with rice pilaf, tzatziki sauce, and steamed carrots and brocoli. A hit in our house -- will definitely make this again!

Indonesian Pork Tenderloin

This was very good. I used thick cut pork chops instead of tenderloin since that's what I had on hand and fresh ginger instead of ground as I prefer the taste. I doubled the marinade for 6 chops, and substituted oyster sauce with a dash of Golden Mountain seasoning for the stirfry sauce as I wasn't sure what it referred to. I served these with Nasi Kuning (Indonesian yellow rice) and a salad.

Lentil and Smoked Sausage Soup

I thought it was good but the kids didn't enjoy it every much, and they normally like lentils. I used smoked turkey sausage instead of vegetarian sausage, and added about 1.5 cups shredded cabbage as I wanted to bulk up the veggie content for the kids.

Chicken Piccata II

This was excellent. I make my own version of chicken piccata but wanted to follow a recipe this time to see how it would differ from my own version. I used 3 chicken breats and sliced them in half lengthwise to make thin pieces. I doubled the water, chicken bouillon and lemon juice as I wanted to toss some cooked spaghetti in the sauce, and I also added about 2 tablespoons chopped capers to the sauce. Super easy to make and everyone loved it.

E-Z Drop Biscuits

These were very good. I skipped the cream of tartar because I didn't have any on hand, and added about 1/4 cup of shredded sharp cheddar cheese, and served them with a lentil and smoked sausage soup. Kids loved them.

Lemon Garlic Tilapia

I made this for hubby and the kids for dinner and they enjoyed it. I used 3 cloves of garlic as we are a garlic loving family, and had to omit the parsley flakes as I had forgotten I was out. Instead of baking the fish, I heated the butter in a skillet, then cooked the fish on one side for a couple minutes, then sprinkled the garlic and lemon juice, salt and pepper and then flipped the pieces over. Cooked for another couple minutes, removed the fish, and simmered the pan sauce for another minute, then poured it over the fish. I served this with steamed green beans and homemade almond rice pilaf. Would definitely make this again -- quick and easy!

Slow Cooker Beef Stew I

This turned out quite good. I used the flour, salt and pepper to coat the meat and browned them in a bit of oil. I sauteed the onions and garlic, then added about 1/2 cup red wine, a tsp. of dried thyme and the meat back to the pot. Added the broth, covered and simmered for about 70 minutes, then added the potatoes, carrots and about 1/2 cup of frozen corn. Simmered another 30 minutes or so. Next time I put put everything into the slowcooker after browning the meat -- I think browning gives a richer flavor.

Waffles I

These were good. I added some chocolate chips to each waffle after I poured the batter on the waffle iron and served them with syrup and peanut butter for a fun breakfast for the kids. Would make these again.

Homestyle Turkey, the Michigander Way

Delicious! I'm a fairly good cook, but this was my first time roasting a turkey. Instead of using minced onion, I stuffed the cavity of the turkey with some fresh onion and celery. I used less seasoning salt (based on some of the reviews I saw) and added some fresh ground pepper. I had to skip the dried parsley because I thought I had some at home but apparently I was out. The turkey was super juicy, and everyone raved about how good it was!

Tangy Dill Potato Salad

This was great for our 4th of July BBQ! I used lowfat italian dressing and lowfat mayo. I added about 1/3 cup diced celery, and used only 1/2 cup of mayo. I also increased the lemon juice to 2 tsp. and added some salt. I would definitely make this again.

Honey Mustard Dressing

Garlic Prime Rib

Excellent recipe! This was my first time attempting prime rib at home. It came out perfectly. I had a 4.75lb standing rib roast, so I halved the recipe. I followed some of the other suggestions and did the first 20 minutes at 450 degrees (and still had a little smoke) and then turned the oven down to 325, inserted the probe for my digital thermometer, and set it for 140 (rare) so it would reach medium rare after resting. It took about 40 minutes to get to 140. I threw some baking potatoes into the oven with the roast and roasted some thin asparagus in the oven while the roast rested. With some creamy horseradish, this was an amzaing Christmas meal!
