Spinach and Potato Frittata
I cooked this for dinner tonight and it was really good! If you are having it as a main dish, I'd say it serves 2-3 people. I also added a little brocolli to the mix. Next time I would try a diced white onion instead of the scallions, which kind of disappeared in the dish. Thanks for the yummy recipe! :)

Banana Banana Bread
This is in my oven baking right now! :) I've made this about 5 or 6 times now and LOVE it. I use 4 little mini-loaf pans and it takes 30 minutes. Like others, I added a little vanilla, cinammon and nutmeg. I also add walnuts to half of the loafs pans - since I love them and husband hates them. I spread about 2 spoonfuls of brown sugar over the top of each loaf before putting them in the oven for a tasty toppings. Yum!!

Bow Tie Medley
Yummy! I simplified the recipe a little and just used what I had on hand - I used "Italian Seasonings" instead of fresh herbs, and it was still really good! For veggies I just used tomatoes, mushroom, zucchini and onions. I used multi-color curly pasta - fun! I had never tried preparing pasta any other way than with tomato sauce - this was delicious and a keeper! Thanks!
