Roquefort Pear Salad

Made this for Thanksgiving and it was a huge hit, everyone loved it. Made as directed, except added a few slices of cooked, chopped bacon which went really well with everything.

Adobo Sirloin

This was pretty good. I wanted more of a marinade, so I added some chicken broth I had on hand and added one more pepper and a spoonful more of adobo sauce. Marinated for 6/7 hours, great flavor, not too spicy.

Easy Yet Romantic Filet Mignon

Great way to cook steaks when the grill is under snow! Our steaks were very, very thick, so they needed about 8 minutes per side (for medium rare). Bacon even got a little crispy. Thanks.

Spicy Crab Pasta

This will be on the menu a lot, a great light dinner. I did make a few changes; I used half the pasta (just 2 for dinner), fresh garlic (3 cloves), and only 2 TBSP of butter (and the red pepper flakes to taste - ie. definitely less then 1 1/2 TBSP!). We loved it made like this, but the sauce wasn't necessarily saucy, I don't know what it would have been like if I had used the recipes pasta amount. I did add about 1/4 cup of reserved pasta water when adding the crab tomato mixture to the pasta. Sprinkled a bit of parm cheese over the top. Delicious.

Little Nut Cups

These were a little time consuming, but got rave reviews at the cookie exchange at work. Be careful not to fill the cups too full or they will spill out over the top when the "cup" starts to cook. I used pecans, so they were like tiny pecan pies.

Marie's Easy Slow Cooker Pot Roast

What a perfect fall dish. Made as the recipe stated, except minus the celery for personal preference. Made the house smell wonderful. Did not brown the meat, slow cooked on low for 8 hrs and everything was perfectly done. Did not make a gravy with the leftover juices as the meat and veggies had tremendous flavor on their own. Will make this at least once a month.

Crab Quiche I

This was one of the easiest and tastiest quiche recipes I have ever made. Used imitation crab and a shredded swiss/gruyere combo. I made the night before. As a personal preference I might not use the pie crust next time. Great reheated for breakfast the next morning too.

California Roll Salad

This was wonderful. Used nori strips as others had suggested and only 1/2 of an extremely large english cucumber. Good use for leftover rice too. This will be a regular lunch item for us.

Carne Con Chilies

This was delicious, and easy to make on a weeknight. I used a can of diced tomatoes instead of a fresh one. Also did not add the red peppers as we cannot handle too much spice. I think I will add some onion next time to the tomatillo mixture. Served over white rice with cilantro and black beans. Will make again.

Mango Chutney Cheese Ball

I really like this. I used 6 sliced of center cut bacon and would use more the next time. Don't be afraid to up the rest of the ingredients because the cream cheese is such a strong flavor. Made my own mango chutney and served it on the side for those who were skeptical. Everyone who tried it thought it was great.

Zucchini Patties

These were very light and tasty. I did alter the recipe a little bit. I used 1 med. zucchini and 1 med. summer squash and I squeezed a lot of water out of them. Added a 1/4 C. of breadcrumbs instead of flour, garlic powder, 1 egg and 1/4 C cheddar cheese as it was all I had on hand. I got 4 palm sized patties out of this - note to self, use bigger pan next time as the patties got pretty misshapen will I was flipping them. I cooked them about 5 minutes each side over medium heat for a nice golden color.

Torta Rustica

This was delicious and pretty. Crust was simple to make, easy to put the pie together. I made it for lunch for my family and my mom said it was the best thing I have ever made. This is a great special occasion dish.

Eggplant Snack Sticks

This was so delicious. My husband and I love eggplant. I can't believe that the wheat germ coating was so delicious. We both felt that if no one had told us about it we probably would have just thought it was coated with regular breadcrumbs. I am going to try this on other things that I would typically bread. Thanks.

Hot Fudge Ice Cream Bar Dessert

Everyone at Memorial Day BBQ loved this. People who didn't initially want dessert had a piece after seeing everyone else enjoying it. Followed the recipe exactly except that I left off the peanuts (I only had salted cocktail peanuts, not dry roasted.) Next time I may just use crumbled reeses pieces instead of putting PB in the chocolate syrup. The hardest part of making this is unwrapping all of the sandwiches!

Seared Tuna with Wasabi-Butter Sauce

This was so wonderful. I am not sure how long it should take to reduce the wine/shallot/vinegar mixture, but after 30 minutes it had reduced to less then half. I used 2 Tbsp of the mixture and saved the rest (about 1/2 cup) to use for another time. It still tasted wonderful and I also only used 1/2 cup of butter and it was plenty. This will be a go to for special occasions. I served this with a white rice - scallion - shelled edamame mix and that went really well with the dish.

Hot and Sour Chinese Eggplant

This was pretty good. I used only 1 small eggplant and added 2 small zucchini, garlic and shallots to the eggplant and tossed everything in olive oil. Also added 1/2 lb. of ground chicken that I cooked up separately with just some salt and pepper. Doubled the sauce and used red pepper flakes because I had not chile oil or peppers on hand. I will make this again, but I will try to make it a touch more sweet. Thanks.

Sugar Snap Peas

Forgot the thyme, added fresh garlic with shallots. still delicious, different from how I normally make these and so easy. Also, forgot actualy recipe so I cooked them at 350 for about 15-20. Also instead of brushing with oil, I tossed all ingredients into a bowl to coat and then spread on baking sheet.

Amish White Bread

I made this with half white/half wheat, and half the sugar. If I had to make over again, I would use the full amount of sugar. We thought the bread made excellent toast, but weren't really crazy about it plain or with butter. Might still play around with the recipe though.
