Grits Casserole
This was a huge hit with my family! I made it as-is. (Just used Egg Beaters instead of real eggs because it's all I had on hand.)

Fried Plantains
If you guys like sweet plantains try this. I ad a tablespoon of Agave nectar for every two plantains, then fry in a butter an olive oil mixture.
