Chicken Enchiladas II
About this Cook
I am happily married and a proud mom of three great kids, ages 15, 13 & 6. Aside from hanging out with my family, taking care of the usual day to day business and being softball and soccer Mom, I am a Transportation and Warehousing Coordinator for a professional hair care and cosmetic company.
My favorite things to cook
Thanksgiving Dinner is my all time favorite meal to cook. I also enjoy our Christmas Eve "grazing". We do not have a formal dinner on Christmas Eve but rather a feast of several appetizers, dips, etc.. Every year we are adding some new things so I always look forward to seeing how the new additions turn out.
My favorite family cooking traditions
My Grandmother and Mother made the BEST fried chicken and potato salad and I have been lucky enough to, from memory and years of watching, master both.
My cooking triumphs
When our son wrote an essay for school about my cooking. :)
My cooking tragedies
I honestly cannot think of one!

Bubble Pizza
I have been making this for years and my family loves it! It is a nice change from traditional pizza. If your family likes Mexican, try my Salsa Bread recipe that is posted. It is very similar to this awesome recipe.

Pork Chops a la Slow Cooker
Delicious! The only things I did different was add baby carrots and a few pinches of a Rosemary Herb seasoning blend. My family loved it! Thanks so much for sharing...I know I will be making this often.
