Cream Cheese Pickles

Reviewed: Oct. 13, 2003
Excellent! Everyone loved them. Just make sure they stay COLD or they are not good. We put them in a metal bowl and put that bowl in a larger bowl full of ice. I had no problems spreading the cream cheese on the pickles (I thought it was easier then spreading it on the meat because the meat just tore.) and then wrapping the ham. Definately goes in my recipe book!

Easy Slow Cooker French Dip

Reviewed: Aug. 8, 2003
My husband liked it more then I did. But for how easy it is I will probably keep it. I really liked the juice left for dipping the sandwiches in.

Kalua Pig in a Slow Cooker

Reviewed: Jul. 31, 2003
Very tender! My husband and I really enjoyed this. The only thing is that I could not find Hawiian sea salt (looked at 3 stores), so I just got regular sea salt, is that the same thing? I thought it could be a little spicier and the salt may be why. I will definately make it again though. It was so easy! Out of this one butt we have had it 4 different meals. 1st: as is by the recipe, next day lunch: with BBQ sauce and vinegar (sandwich), next day dinner: mixed in with beef ramon noodles, third day lunch: heated on a bun with seasoning salt, garlic, and cheese. Every time was yummy and different. We probably could have had it again if we hadn't felt sorry for our dog, everytime we ate we threw her chunks!

Sausage-Potato Casserole

Reviewed: Jul. 28, 2003
Good and easy. I think I will make this on my lazy days. I like having a different way to use sausage. Kind of tasted like fried potatoes (the breakfast kind, but without the grease) and sausage and cheese. I skipped the caraway because I don't like that and also used smoked sausage (Healthy Choice) to cut down on fat. This will go in my recipe book. I have to warn you though, this is not one of those "knock you off your feet" recipes. Just good and simple.

Slow Cooker Chicken and Dumplings

EXCELLENT! SO EASY! I am from the south and these are great! Just left out the whole onion because I am not an onion person but put in some dried minced onions instead and it was fabulous. Will definately make again.

Burrito Pie

Spicy! Hubby really likes this recipe. He said if he could have this he would never go to taco bell again. I thought it was good too. I took the advice from some of the other reviews and used 1 can of black beans, reduced the taco sauce in half, added a few jalapenos, left out the onion and added a packet of taco seasoning. OK so I changed it a little, but I knew I would like these tastes together. I think I would have been wonderful without the changes too.

Barlow's Blackened Catfish

Reviewed: Jul. 22, 2003
Wow! Spicy! This was pretty good, but my husband and I both agree to use less of the peppers and salt. We love hot and salty stuff too. I really enjoyed it half way through and then it started getting overwhelming. I think that I will keep all the ingredients but play with it until I can find the right amount of eveything to suit our tastes.

Hearty Ham Casserole

Reviewed: Jul. 22, 2003
I told my husband that we would not keep this recipe unless it was awesome because you use so many dishes and it takes a while to make. Well it is going in my recipe book because it was wonderful. I really was not expecting it to be so good. I made it exactly as told, but my husband sprinkled a little salt and garlic powder on his so I tried that too and it made it even better!

My husband loved this recipe! I wasn't sure at first, but the more I ate, the more I loved it too. It will go in my cookbook and that is a big complement since I only keep the really good ones. Might cut back on the wine just a little though.

Cheesy Pork Chop Casserole

Reviewed: Jul. 2, 2003
I was really looking forward to a cheesy recipe, but the onion soup was all you could taste. It was good, but not what I expected. Tasted just like as pork roast instead of cheesy. Probably won't make it again because you could use low fat cream of mushroom soup and get the same flavor.
