Catherine's Spicy Chicken Soup

OMG!!! There is a reason this is a five star recipe. It tastes wonderful and is healthy too! My husband and brother both said that it was awesome. I did like others and used diced tomatoes with green chiles in place of the regular diced tomatoes because we love spicy. Also because I knew that I was going to let it simmer for a long time I didn't bother sauteing the onions and garlic I just threw it all together. Another reviewer said she just boiled frozen chicken instead of thawing it out first and I did that too. Worked great and saved time. Yum yum! Try this recipe.

French Onion Soup II

I love french onion soup from restaurants. I wanted to try to make it myself because I never can get enough of it when I am out. It tasted kind of strange while it was cooking, but after I added the bread and cheese at the end it tasted good. Would have liked for it to taste a little stronger. But overall pretty good. I did have to add a little extra worchestershire as others have said and you will definately want to double it if you want big servings.

French Dip Sandwiches

Unfortunately I really did not enjoy this recipe. I think it was the rosemary or something. Just did not taste at all like a french dip sandwich to me. I followed the recipe exactly. My husband liked it so that is why I gave it three stars. I hate giving bad reviews...sorry :(

Sour Cream and Horseradish Asparagus

Really good and different way to prepare asparagus. As others have said you could use more asparagus because there was more than enough sauce. Be careful not to burn them at the end.

Pretty good. Can't do wrong with anything using a puff pastry. I would actually reduce the time to 20 minutes next time, they were well done at 25 minutes.

Crab Crusted Grouper

Pretty good grouper. I really wanted to give this more like a 3 1/2 stars. I made it exactly as instructed. It turned out really good, just a little bland for my taste. Will probably try this again with a few more spices and maybe fresh crab.

Dee's Roast Pork for Tacos

This is a great recipe! Something different to do with pork! I made it exactly like the recipe instructed and the meat just fell apart. We put them on corn shells with all the fixings (tabasco would be good on them). Thanks!

Red Beans and Rice

GREAT! I have always used zatarains but never will again after trying this recipe. So easy and good! Used rotel instead of diced tomatoes and added another can of kidney beans and some hot sauce. I like them hot!!!! Thanks for the recipe.

Italian Style Pork Chops

Pretty good. The good thing about this recipe is that I usually have all of the ingredients on hand. I cooked 4 small pork chops and used 1/2 of the other ingredients. I could have used 1/4 and still had plenty. Hubby really liked it.

Fresh Spring Rolls With Thai Dipping Sauce

Yummy! They tasted just like I had ordered them at a Thai restaurant! I made the rolls exactly as the recipe read. Could not find mirin so I had to find a substitute online. The sauce was pretty good. We also had store bought peanut sauce which was very good on them. All I can say is you have to be very careful with the wraps or they will tear. You can do it though. This was a good starter before serving Sukhothai Pad Thai & Thai Chicken Curry with Pineapple from this site. TRY THIS RECIPE!!! AWESOME!

Sukhothai Pad Thai

Absolutely fabulous! We loved this recipe. Of course I could not find the tamarind pulp or the oriental radish. Subbed tamarind pulp with lime pulp and just left out the radish. Oh yeah, as others have said you have to soak the noodles in very hot water. Mine were still not completely soft after 25 or 30 minutes. So I turned the temp to medium like the recipe said and gradually added about 1 1/2 cups of water while stirring occasionally. Well it worked, the noodles soaked up the water and were perfect. I would just add a little water at a time. I am wondering if I could have added the sauce sooner and not used as much water because I had to let the sauce cook down a little. Anyway I was worried about all those peanuts too, but they were awesome! I think I could have actually added more! This recipe went well with Thai Chicken Curry with Pineapple & Fresh Spring Rolls with Thai Dipping Sauce from this site. TRY THIS RECIPE!!! AWESOME!

Thai Chicken Curry with Pineapple

Very good curry chicken!! Thanks so much for this recipe. Used chicken breasts because that is what I had on hand. I followed the recipe exactly & it was perfect. Served over brown rice. Next time I may leave the pineapple out just because I think it would be just as good without it. Also made Fresh Spring Rolls with Thai Dipping Sauce & Sukhothai Pad Thai from this website. They were good together although it was alot to prepare at once. TRY THIS RECIPE!!! AWESOME!

Szechwan Shrimp

OH MY GOODNESS, this was fabulous! Never thought I could make chinese food like PF Changs, but with this recipe it was possible! The flavor was perfect. Added steamed brocolli & carrots. Didn't have precooked shrimp so I cooked the shrimp in the oil and garlic before adding the sauce and vegetables. Served over brown rice. Whenever I have chinese I have to make the "chinese condiment" of spicy mustard, chile paste, & soy sauce for a little extra kick. Tripled the recipe which was way too much. Doubling would be PLENTY. TRY THIS RECIPE!

Dutch Potatoes

These are awesome!! I loved this recipe! They looked so colorful too! Oh yeah, instead of using a mixer to mash the potatoes I used a hand masher so that they didn't get too smooth. TRY THESE POTATOES!!!!

Garlic Cheese Chicken Rollups

Awesome flavor! I would not say it is a quick and easy recipe though. But for me anything that is coated takes longer. I didn't have the bread crumbs so I ended up using cheddar flip side crackers. The only garlic cheese spread that I could find was Alouette which is always yummy. I was actually looking for a cheddar garlic log (roll). Maybe I will try that next time. Anyway try it, it is awesome! Oh yeah, my cheese ran out too, but it was still great.

Ground Beef Curly Noodle

Pretty good considering the ingredients used. I did used two packages of ramon noodles (and both seasoning packets) as some others had done. Surprisingly tasty! When cooking, I thought it was just going to taste like ramon noodles, but the tomatoes really gave it a good flavor. Oh I did have to add a little water, maybe 1/3 of a can. Will make again if I need a FAST & EASY recipe.
