Cauliflower With a Kick

I don't know what happened, but I didn't like this at all. Sorry. The texture was gritty. I don't think I should have added any milk...maybe cream cheese or something would have been better, but then it would take away from the healthiness of this dish. Won't make again.

Chicken Lasagna III

Fabulous! My husband told me that if I got the recipe off of the allrecipes website to give it five stars! I agree with him. I made it just as the receipt is written. The cottage cheese makes the recipe. It really does taste like a version of a lasagna. I always substitute the cheeses and sour cream for the fat free or low fat versions if I can to help around the waist line. Did turn the broil on for a few minutes at the end to get the cheese on top brown and a little crisp. Can't wait to eat the leftovers tonight!

Soft Oatmeal Cookies

My husband said they were the best oatmeal cookies he had ever had. I did add about a cup of raisins. The first batch I let chill about 45 minutes. Decided to see how it would do in the frig for longer so I left it overnight and made another batch the next day. And finally one more fresh batch on the third day. The dough kept nicely and I was able to have a fresh cookie for 3 days! Several days after being baked they have held up really well and are still very moist.

Pork Chops with Blue Cheese Gravy

This was awesome! So easy! I used fat free milk and corn starch instead of whipping cream as others suggested. No need to double the cheese. I used low fat blue cheese. This is a keeper.

White Chili II

Awesome! Loved it. My husband, me and my brother all really enjoyed it. Moving into fall this is the first hearty dish I have prepared. I pretty much followed the recipe as is except a few things. I boiled the chicken breast with a bay leaf and used that water instead of cans of broth. Also didn't saute anything and didn't use any oil, just added all the other ingredients to the pot and let it simmer for a while. I did use a can of white corn in place of one of the cans of beans. My pot would only hold 4 cans.

Blackened Chicken

This is a great rub. Would definitely make again. As others have said, I had to cook the chicken in the oven at least 20 or 25 minutes before it was done. Maybe because the breasts were so large. I was afraid to use my cast iron skillet on my flat top stove so I used a regular metal skillet and it worked fine. I think this would be great on fish.

Smoked Gouda Mac and Cheese

Granny's Cherokee Casserole

My husband and I really liked this. I used ground turkey and brown rice and it was great. Served with corn. Next time may just mix the corn in with it. I didn't change the recipe other than the two substitues above. Great because I have most of these ingredients in my pantry everyday.

Balsamic Chicken with White Beans and Spinach

Not for me. I think it would be better to hold off on adding in the beans and spinach to the pan. Instead serve the chicken over uncooked spinach and rinsed can beans.

Country Apple Dumplings

Awesome! Would be great for a diner party dessert. So easy! Will 1/2 next time for just me and my husband. I think I could have used 1/2 the butter and substituted splenda for sugar. Used a diet Mt Dew.

Olive Chicken II

Very yummy! I totally forget to put the tomatoes in but it turned out great. As a couple of people noted I added some corn starch at the end to thicken the sauce. Served over rice. Will make again. Will probably bake next time because the chicken was not very tender.

Cowboy Caviar

YUMMY!!!! I like to call this redneck caviar...being from the south. I could eat this stuff everyday, and it is good for you too! Made exactly as the recipe was written. Don't leave out the black eyed peas like other have said. Trust me, I really don't care for them either, but they don't taste like black eyed peas when they are mixed up with everything. You will love it!

Steff's Shepherd Pie

Very good recipe. I did make a few changes just because I couldn't find the recipes I wanted. I will share what I did but I am sure the recipe is great as is. Put carrots in with the potatoes and mashed them together. Sauteed a whole onion in with hamburger meat after I drained the grease. Added two beef bouillon cubes and a can of corn (drained) with the meat mixture. Instead of putting cheese in the pie, I sprinkled a layer of cheese on top the last 10 minutes of baking.

Pork Roast with Tangy Sauce

Yummy! I was skeptical but man this was good. My husband went on and on about how great it was. Will make this again because it is so easy and such a nice change. You should definitely serve this with mashed potatoes, but what isn't good with mashed potatoes? I doubled the rub as I had a pretty big roast, but didn't need to double the sauce. Thanks for this recipe!!! Love it!

New Year's Day Black-Eyed Peas

I don't even like black-eyed peas, but I loved these! Only thing I did different was used a can of diced tomatoes with green chiles to add a little spice. I didn't blend them. AWESOME PEAS! Next time will make with corn bread.

Busy Day Chicken Rice Casserole

Excellent! My husband actually thanked me for being such a good cook...all because of this recipe! So I do not know why some people have been downing this recipe, it's great. I made it as written except I used more health concious brown rice and I added about 1/2 a cup more rice and water. Also someone suggested putting the mushroom juice in the recipe instead of draining. So with the mushroom juice, I did only add 1 cup of water. I served Margaret Holmes turnip greens with the casserole. It was easy and went well together. Oh yeah, some people are mixing the onion soup mix in with the rest of the casserole and I would not recommend that...the soup mix is great on top, it makes the chicken taste wonderful.

Southwest Chicken and Pasta

This was pretty good. Hubby really liked it. What I liked is that it is truely an easy to make, healthy, one pot recipe. I added 2 cubed bnls/skls chicken breasts in when I added the vegetables to the boiling pasta because I did not have cooked chicken. Also used wheat corkscrew pasta and frozed broccoli florets. Didn't double the sauce as others had done. I felt like it had just the right amount. Not sure if I will make again???

Catherine's Spicy Chicken Soup

OMG!!! There is a reason this is a five star recipe. It tastes wonderful and is healthy too! My husband and brother both said that it was awesome. I did like others and used diced tomatoes with green chiles in place of the regular diced tomatoes because we love spicy. Also because I knew that I was going to let it simmer for a long time I didn't bother sauteing the onions and garlic I just threw it all together. Another reviewer said she just boiled frozen chicken instead of thawing it out first and I did that too. Worked great and saved time. Yum yum! Try this recipe.
