About this Cook
As one of my best friends would say, I am GRITS (Girl Raised In The South). Not ashamed of my southern accent at all! I grew up hanging out in the kitchen. I learn to cook from my mom, grandmother & aunts. We would make yummy meals and then play cards around the kitchen table. Happily married to my best friend Brian. I am originally from TN but right now I am living in KY. Will soon be moving to another state as soon as my husband gets his new assignment. I love to try new recipes, that is why I love this site.
My favorite things to cook
Everything except fried foods. I cannot fry for some odd reason! Oh except eggs! I love: Speghetti & Meatballs, Mac & Cheese, Shrimp, Chocolate Pie, Christmas Sugar Cookies, Brocolli Casserole, Hashbrown Casserole, Chicken & Dumplings, Mashed Potatoes, Meatloaf, Country Ham, Cheese Biscuits, Fried Eggs, Cheese Grits, Creamed Beef on Toast, Turnip Greens, Pecan Pie, Banana Bread, & anything with lots of cheese.
My favorite family cooking traditions
Every Thanksgiving weekend me and my mom make Christmas sugar cookies and freeze them so that they are ready to be iced the week of Christmas.
My cooking triumphs
Every time a meal turns out yummy it is a triumph for me!
My cooking tragedies
I have a bad habit of leaving bread in the oven too long! Also just cannot fry chicken or anything. Never works out.

Catherine's Spicy Chicken Soup
OMG!!! There is a reason this is a five star recipe. It tastes wonderful and is healthy too! My husband and brother both said that it was awesome. I did like others and used diced tomatoes with green chiles in place of the regular diced tomatoes because we love spicy. Also because I knew that I was going to let it simmer for a long time I didn't bother sauteing the onions and garlic I just threw it all together. Another reviewer said she just boiled frozen chicken instead of thawing it out first and I did that too. Worked great and saved time. Yum yum! Try this recipe.

Yellow Squash Casserole
Very good, especially considering I don't even like squash! Will definately make again.

French Onion Soup II
I love french onion soup from restaurants. I wanted to try to make it myself because I never can get enough of it when I am out. It tasted kind of strange while it was cooking, but after I added the bread and cheese at the end it tasted good. Would have liked for it to taste a little stronger. But overall pretty good. I did have to add a little extra worchestershire as others have said and you will definately want to double it if you want big servings.
