Old-World Cabbage Soup

5 stars with slight tweeking ..... could not imagine ketchup in soup so I omitted it. (No problem) I added 2 large cloves of garlic (yum) and added 2 cans of drained red beans = yes. Next time I will add some cooked ground turkey and only used one can of beans.. Also, there is no need to microwave the veggies.

Sweet and Sour Meatballs II

The sauce makes this recipe ..... the meatballs are dull. Next time I will add some herbs to the meatball recipe. I am disappointed with the high calorie content but sometimes we just have to SPLURGE!! I used ground turkey and Gluten Free bread crumbs. I buy a lot of ground turkey when it goes on sale ..... it's great to have a REAL NICE 'change of pace' recipe.

Fresh Asparagus and Chicken Casserole

Very disappointing .... due to blandness even after adding garlic. I used par-boiled broccoli (asparagus is too expensive in winter) but the result would be the same using the called-for asparagus. We will eat the leftovers but putting horseradish/sour cream on top. I will not be making this again.

Easy Slow Cooker Sweet and Sour Pork Chops

Nice flavor and very easy. I used more chopped onions, added fresh pressed garlic, added a "glob of peach preserves, substituted apple cider vinegar for the lemon, and added bell pepper chunks and sliced canned pineapple (both near the end). I thickened the sauce to use as gravy over rice. Next time I will cut the onions in big chunks and add red food coloring for a more traditional looking dish. I love the ease of using a crock pot. I will make this often. Thanks.

Oven Roasted Red Potatoes and Asparagus

OMG .... this is delicious. Be sure to add the asparagus at the end so it doesn't overcook. I cut mine in 4ths. Upon cooling (waiting for my husband to end his business call), I drizzled some Balsamic Vinegar on top. (This advanced the rating to a 15. Tee Hee.) Next time I made add a little while cooking. Also, next time I will add some diced red onions. I will be making this soon. :)

Rita's Spinach Casserole

I agree to reviewer's comments such as adding onion, garlic, more Italian seasoning, etc. I used 1 1/4 C. sour cream along with 1 small can of tomato sauce and 1 can undiluted tomato soup. Not dry out at all. I mixed the pasta, ground turkey, sauce, soup, seasoning and half of the spinach. Love the green color on top w/ the cheese with some spinach mixed in. Totally tasteful and makes a lot! Thank you sooooo much. My husband rated it a "14". It IS comfort food.

My Mom's Chicken Cacciatore

Totally yummy. I used Marsala Wine instead of Brandy (didn't have any) and bone-in thighs. Research on the Internet recommended the Marsala as a substitute. I have not made Chicken Cacciatore in YEARS but this recipe will change that. BTW, I mixed together the liquid ingredients the day before and stored in the refrigerator. They really bonded!! Thanks.

Balsamic-Glazed Salmon Fillets

We love salmon and balsamic vinegar. A local Italian restaurant serves something similar over a bed of fresh spinach. I must have cook the sauce too much as it carmelized. I need more sauce. The mustard was 'almost' a turnoff but tried it anyway. Lovely, lovely flavors .... just need more sauce!!! This recipe is restaurant quality.

Very close to the coleslaw Mom made. She used raisins or Fruit Cocktail, I used Craisins. This is a tad spicier than hers which is a good thing. I, too, used less mayo and added some sour cream. Yum.

Ratatouille

Great ingredients ..... especially the sauted garlic and eggplant. Did that, as given but used much more garlic!! I made the following major change ... mixed the remaining ingredients (except for the tomatoes), LIGHTLY sauted them, layered then in thirds, about 1 cup each, adding tomatoes, cheese, white wine, and basil between layers. I used more cheese on top. I reduced the baking time to 30 minutes = perfect outcome. The vegetables were not overcooked. I RARELY alter the original recipe the first time but think the ingredients look better with a little more color from sauting. I will make this on a regular basis. Thank you for the healthy, meatless dish!!

Taco Casserole

Yummy "as given" but tweaked it just a tad: added garlic, added cumin, added more cheese, added canned corn, added kidney beans, omitted the chips, and only used cheddar cheese, but still a wonderful recipe!!! I used GF noodles. It made a lot so we can use the sensational leftovers, which only get better with time. Thanks a bunch!!
