Breakfast The Night Before

I made this recipe as given but opt to use "Italian" (seasoned) pork. It was yummy. I love the ease of cubing the cheese and preparing the dish the night before.

Peach Pie

How odd to read an identical version of the pie I have been making 'forever', passed down from my Mom. We are pie makers and eaters. Actually, pie making is so easy, I only used approximate measurements and they turn out perfect everytime. It's the love!! Just ask my brother and friends, who often request pie for breakfast!!

Corn Salad II

What a nice change for a salad. It is so easy to make!! It is very refreshing in the hot weather. I peeled the cucumbers (used 2) and diced them. Next time I will leave part of the peel. Years ago, a girlfriend taught me to strip the peel for more fiber and color. I used Grape tomatoes and left them whole, although I almost cut them in half. I did not measure the sour cream and mayo but used the same proportion. I used celery salt and pepper .... lots of both. I LOVE THE CRUNCHY AND MY HUSBAND LIKES ANYTHING CREAMY. He said he could eat this for dessert!! I had all of the ingredients on hand. Think of all of the other possibilities .... such as colorful bell peppers, blanched broccoli, etc. Thank you sooooo much!!

Chocolate Cavity Maker Cake

Wow! Great cake AND super easy! I used Duncan Hind's Swiss Chocolate (all I had on hand). I think using the original Kahlua is a must. As I told my girlfriend, I am not a chocoholic, but I may become one after eating this cake. Yum.

Fish In A Vegetable Patch

I used Sole. Loved this lower-calorie dinner. I served it over rice and topped it with some Parmesan cheese. What a treat to have a yummy, easy, healthy meal!

Red Cabbage and Apples

I only had 6 C. of red cabbage + 1 green apple but used the same amount of not-packed 'brown sugar' and white vinegar. Totally, totally yummy. It made a lot. I served it as a side dish w/ Beef Strogenoff, my husband's favorite dish. Thanks. I will be making this again.

Creamy Banana Bread

Excellent!! I don't think I will ever make another BNB as this one is fantastic. I couldn't even wait until the loaf cooled down....I had to try it even hot!! I can't wait until breakfast tomorrow morning. I had all of the ingredients at home, including 2 very ripe bananas. I used walnuts, which is my preference over pecans. I don't care for the recipe title. It should be "Streusel Banana Bread". Thank you for the great recipe!!

Beer Chops I

Yummy. I, too, added a can of cream of mushroom soup, pepper and a couple of splashes of balsamic vinegar, which helped the taste and created an excellent color. I doubled the onions to two, using one red and one yellow. (Never too many onions in this household.) My husband and I are NOT beer drinkers and we both loved this recipe. Oh, the wonderful aromas as it was cooking, too. I thickened the sauce on the stove for serving over rice. I loved the challenge of tweeking this recipe. For shame it got such a bad rap. Even though I am an experienced cook, I love the ease and simplicity of this recipe!!

Steak 'N' Vegetable Soup

We loved this soup. It is so quick to make. It is so flavorful it seems liked you cooked it all day! I will make it again and again. I used dried herbs, frozen green beans instead of frozen peas, thickened it a tad, added two chopped Roma tomatoes at the end. It can only get better with age!!

Beef Burgundy I

My husband and I loved this recipe. Yes, the sauce is thin; just thicken it up with some cornstarch .... quick and easy for every good cook. Never too many onions or mushrooms!!

Artichoke Chicken

Excellent .... would give it more stars, if I could. I used 1 large garlic clove (minced) and ground pepper. There was a lot of sauce. I served it over rice = YUM. Next time, I will try the 1/2 mayo + 1/2 sour cream combination and maybe cut down on the amount of sauce. I cannot wait to make this again, and again, and again. Thanks so much!!

Roast Beef with Coffee

I was intrigued with this recipe as I am a coffee lover. How can the beef be so dry with all of that liquid? (In addition to the coffee, I added water and a beef bouillon cube. My husband hardly ever says "don't make this again" but did this time.

Quick and Easy Chicken Spaghetti

We are not angel hair pasta fans so I used mini-wagon wheels. I sauted 1/2 chopped onion, 2 cloves minced garlic and 1 diced zuchini. I used diced canned tomatoes w/ Italian seasonings. The dish IS comfort food. Could use a little more Italian seasoning ... definitely, next time. The dish reminded of Mac + Cheese w/ chicken. Indeed, it IS a nice change from marinara and Alfredo sauces. Yum.

Apricot Chicken with Balsamic Vinegar

My hubby and I loved this recipe. We are apricot lovers. Yes, the sauce is liquidy however with a little cornstarch and water it thicken up quickly and perfectly. Be sure to serve over rice. I will be making this again!!
