Downeast Maine Pumpkin Bread

Dont let it fool you-- this is cake not bread, esp with the 3 cups of sugar in it. It is really good- everyone liked it BUT I think I will do it again with 1 less cup of sugar. If that works I may cut the sugar even lower. Also it says it makes 3 3x7 loaves, I made 4 and they almost overflowed the pans, I may go for 5 next time. Did I say next time??- yes I will make this again.

Good Old Fashioned Pancakes

yup this is a keeper. Esp because it used ingredients I normally keep on hand. I accidently used 3 T sugar whoops- anyway I liked them and so did the 4 year old pancake afficianado. I do think it is tooo thick, I had to add about 1/3 c more milk

Peach Frozen Yogurt

Just ok. I followed the recipe except I added MORE fresh peaches and 1 pint of fresh rasberries. The flavor was not nearly as intense as I expected. Maybe I could have cooked down the fruit to get more water out? I didnt want sweet I wanted concentrated flavor, I might try again

Katie Lee's Spiced Nuts 'n Chex® Mix

WOW,I have never been the first reviewer before. Anyway this is good stuff. Not too spicy at all. Even the 4 yo ate it up, so I think next time I might add a touch more cayenne. I even used some wheat chex as 1 substitution as I had them already. You can never have too much fiber. I will def make it again.

Emily's Famous Tiramisu

I made this with a combo of store bought lady fingers and some angel food cake cut into ladyfinger size, and kahlua instead of rum, all leftover stuff. I used store bought whipped topping . I made it for DH's book club dinner, got raves about it. It really is better the onger it sits, I made it in the am and it would have been better if I had done it 1-2 days before. The angel food cake worked great.

Roast Sticky Chicken-Rotisserie Style

I stuck to thre recipe except forgot it was suppose to marinate for hours........... so it went right in the oven. Tasted pretty good. Next time I will roast it breast DOWN to try and keep the breast moister. Would probably work in a crockpot too.

Chili-Lime Chicken Kabobs

not at all what I expected after reading the reviews. I stuck to the recipe except for leaving out the cayenne. Just pretty blah, I dont think the cayenne would have improved it dramatically. Oh well, better luck next time.

Beer Margaritas

Yea, I was skeptical too. I took the ingredients to a party and mixed up a pitcher. Everyone loved it. Someone else brought the stuff for a regular marg and we did a taste test. The Beer Marg won. This was an "expert" group as we drink a lot of Margs and since we live in New Mexico I consider the group to be pretty savvy.

Rhubarb Crumble Pie

Husband is from Ireland where rhubarb grows wild, its his favorite. He really liked this and so did the rest of us. Now that I made it twice I agree you can adjust the topping amt according to your taste, and less butter and more rhubarb sounds like a good idea. I used frozen rhubard as I live in the desert, I didnt drain it, just let it thaw and omitted the water.

Slow Cooker Spinach Marinara Sauce

I read the reviews and made some obvious changes. I agree 2 1/2 TABLESPOONS red pepper must be a typo. I didnt add any due to the 3 year old. I used one 12 oz can paste(what would I do with the leftover can?) I also added salt to taste at the end and sauted with just a little olive oil. I also added fresh mushrooms while sauteing. The carrots seemed an odd ingredient but I they basically disappear so I will do that again, anything to add more veg to the diet. Otherwise I stuck to the recipe. AND the result was the husband told me it was one of the best things I ever made !! and to share the recipe with my grown daughter, thats a first. Next time I will add a little red wine, some for me and some for the pot. OH YEA, I sauted some skinned chicken thighs lightly then tucked it under the sauce for about 30 min.

Easy Mint Chocolate Chip Ice Cream

I stuck to the recipe. It was a little too minty for the 3 yo so next time would cut mint extract in half. Also I chopped up a semisweet candy bar instead of chips, worked well but next time I think I will try mint candy like Andes after dinner mints. It also was a little grainy- I dont know why. I will probably try it again.

Indian Chicken Curry II

I made this 4/12/08. Probably the best curry recipe Ive tried so far. I stuck to the recipe except used boneless/skinless thighs. I used garam masala for the curry-I think thats what it meant. Served it with jasmine rice and steamed cauliflower. Husband said it was "really good" without being asked. I froze the other half a can of coconut milk- wonder if that will work?

Sage Pork Chops

I followed advice and added 1/4 cup chopped onion and 1 tsp salt. I did thicken the sauce a bit at the end. I used beef broth (I would never use a cube). Not amazing but pretty good. I might make it again. Some red wine during the simmer might help it, some in the pan and some in a glass.

Spinach Quiche

I made this without the crust to cut on fat/calories. Eggbeaters in place of whole eggs- this is a perfect recipe for eggbeaters. Added a 16oz bag of spinach(thats what I had) a little less feta(thats what I had). The canned mushrooms didnt have any flavor so I will do fresh sauted next time. Overall though I liked it and will make it again.

Quinoa and Black Beans

This was my introduction to "Quinoa". LOVED it. My husband also. Will definitly make it again. Would be perfect for a summer barbeque side dish. Oh yea- I also used just one can of black beans- seemed the perfect ratio to me.
