Broccoli and Tortellini Salad
I didn't have any apple cider/vinegar left to make this so I subbed with tarragon vinegar. Oh my! This was the best salad ever! It was ready and waiting for the BBQ to start and when I went in in to pull it out of the fridge, half, no, more than half was gone! Seems the guests found it and began munching away! It is a little sweet so next time I will decrease the sugar a bit but other than that it's a keeper!

Sausage Egg Casserole
This is now a staple for Easter brunch. I make two - one I substitute the reduced fat sausage with a spicy sausage to add some sizzle for the more bold palates and one exactly as the recipe calls for everyone else - both are hits! HINT: Don't use a deep dish. As others have posted, the middle can be runny and edges burnt if it is too thick.

Jalapeno Popper Spread
This is so easy to make and yes, it tastes exactly like a jalapeno popper! I brought this to a housewarming and it was devoured first and then everyone was asking if I brought more to refill the bowl!
