Slow Cooker Thai Peanut Pork
I made this using a pork tenderloin and added water chestnuts and baby corn. I served it on chinese bean noodles garnished with cilantro, green onions, peanuts and lime. My terribly picky meat and potatoes crew loved it!

Apricot Brisket
This is fabulous with prunes instead of apricots. It's a family staple.
