Easy Corn Chowder I

I needed to double the recipe for my family. When I started cooking there were so many reasons to go wrong. First I didn't have an onion, then I had only one potato. I finally used 2 TBSP onion powder, the one onion, 1 1/2 cups potato flakes. I added a stalk of celery to try and get the chunk that I was missing. I used frozen corn instead of frozen and only one can of cheddar cheese soup (remember I was doubling the recipe) but I didn't have another can of condensed soup. Believe it or not, with all the substitutions, it turned out good enough for my husband to have seconds (and he doesn't do that unless he likes it). All in all a success even with all my substitutions.

Alfredo Sauce

If I could give this a zero I would. I must have done something terribly wrong but I followed the directions right up until it says add the cheese. I added the cheese and the cheese immediately started clumping and ended up in one big clump with the melted butter and some other kind of thin liquid around it. It smelled sour too. I tried another recipe.

Oatmeal Peanut Butter Cookies III

These cookies were great. I didn't make the filling, made 12 cookies and cooked them for 15 minutes just until the edges were browning. I also added chocolate chips. They were wonderful. I will definitely make these again.

Alfredo Light

I thought this was pretty good. In general I think alfredo sauce doesn't taste like much more than butter and cream. This wasn't too different. I did make a few changes. I didn't want to use so many pots so first I started the pasta. While that was going I sauted the onion, garlic and oil. When that was limp to golden brown I added the flour. I stirred that until it was all blended then added the liquid. For liquid I used a can of evaporated skim milk, a can of water and a teaspoon of chicken broth base which would be like chicken boullion. I added the pepper and a dash of cayenne pepper too. When that came to a boil I added the cheese. My kids liked it and I thought it was good. I'm not a fussy eater just happy when my kids eat without complaining.

Awesome Broccoli-Cheese Casserole

This was DISGUSTING!! I made it just as the recipe said. It had sooo much goo on it I wasn't sure what kind of vegetable it was. This is a sure fire way to load a perfectly good vegetable with lots of fat and calories. Take it from me, if you like your veggies straight up skip this recipe. You won't regret it.

Biscotti Toscani

This really tasted alot like cardboard. Maybe it was the changes that I made but the cooking time adjustments I had to make surely wasn't me. My oven is usually pretty accurate. I substituted splenda for the sugar. I didn't have the orange zest so I substituted liquid orange extract. I added 1 tsp of cinnamon. The dough was so dry that I had to add about 1/4 cup of liquid, I used coffee. When I baked it I had to add 15 minutes cooking time the first time and doubled the cooking time the second time. In a word Yuk!

Banana Banana Bread

This is GREAT!! This is the only Banana bread that my kids will eat LIKE CRAZY. And the best is that it uses sooo many banana's. I use 5 bananas. I also have substituted ground oats instead of the flour to up the fiber but it is great as written too.

Moroccan Salmon Cakes with Garlic Mayonnaise

I was very disappointed. I did substitute talapia and orange roughy for salmon since my husband doesn't like salmon but otherwise I made this by the recipe. I thought it was bland and tasted like dressed up coucous more than anything else. Sorry, I won't be making this again.

Black Bean Hummus

My hummus was way too soupy. I added a roasted red pepper but I wouldn't think that would make it soupy. Adding the drained liquid from the can of beans made them particularly memorable for my family even after I ate them, if you know what I mean. If I make this again I will drain and rinse the beans and not add the liquid from the can.

Pork Tenderloin alla Napoli

Everyone will think that I am crazy but here are my substitutions. First, I used a tsp of dried rosemary since I didn't have fresh. I also substituted evaporated skim milk for the cream. Finally I didn't have the olives so I substituted diced kosher pickles. I know it sounds crazy but even my fussy son ate it and liked it. My husband couldn't get past the look of the gravy with the milk and the chopped tomatoes and pickles so he would try it but I thought it was excellent. The pork was tender and moist too.

this was good. i had to substitue almonds for pecans since i didn't have pecans. there was way too much sauce so i dumped all the sauce in the baking pan. turned out really good.

Southwestern Turkey Soup

This was really good. A very different taste than my usual turkey soup. I added a can of black beans as previously suggested. I couldn't find avacados so I went without it and it was good.
