Thai Chicken Curry with Pineapple

I completely forgot to add the pineapple, but the rest of this recipe was fantastic! I had cooked and diced chicken thigh meat so after simmering for 10 minutes I added the precooked chicken and simmered for another 5 minutes or so. I served it over rice noodles.

Slow-Cooker Chicken Tortilla Soup

This was great!! As previous reviews suggested, I cooked chicken tenderloins in the soup and shredded about 2 hours before serving. Also, I used tortilla chips instead of cooking corn tortillas. I omitted cilantro although I will give it a try next time. Three out of four people stirred in sour cream, which really made the soup for me. We also sprinkled a mexican cheese blend on top. It was great!

Spinach Roll-Ups

This was good, but I made my own modifications based on previous reviews: I used 8 oz cream cheese instead of mayonnaise, only used one package of spinach, and left out the bacon bits. I had some garlic and herb tortillas so I used those instead of plain, and I only used 5 tortillas (12 inch). That seemed like enough. The filling didn't spread all the way to the ends so they had to be eaten first. I'll make this again.

Buffalo Style Chicken Pizza

It's different, and it's good. I used far less blue cheese, chicken, and hot sauce to make a smaller pizza on a homemade crust. Something different for once.

Beer Dip I

This was gone very fast. I've made it twice now and it turned out far, far better when I beat the cream cheese for a few minutes before adding anything, and then let it sit in the fridge overnight. It is good on pretzels or pretty much anything.

Easy Tuna Casserole

Oatmeal Raisin Cookies IV

"Soaking the raisins is definitely a great idea. My cookies turned out a little flat but delicious and soft. I will make these again!" That was over a year ago. I've made this recipe since many times, and every time I convert someone to the recipe. My mom begged me for it. Several people have told me they are the best cookies they've ever had. People who don't like cookies like these cookies. Family members have stolen them out of each other's mailboxes. What more can I say??

Allie's Delicious Macaroni and Cheese

I nixed the ham, used 12oz of macaroni, used only sharp cheddar cheese, and for the milk I used about 1/3 heavy cream. Smoked chipotle tobasco sauce also made an excellent addition - this was great! I sprinkled a little extra cheese on top for the last 5 minutes of baking. I'll definitely be serving this to the future in-laws.
