Mimi's Zucchini Pie

This was delicious. Like another reader, I put a center layer of tomatoes and Parmesan and then more tomatoes and Parmesan on top. This is good for brunch, lunch and dinner. Just use a little imagination on the "go withs". I see lots of possibilities in substitutions using the basics.

Mashed Potatoes with Fried Mushroom, Bacon, and Onion

This was fantastic. But like many others, I added some milk since the mixture was too stiff without it. I also added course ground garlic salt for a little added zip.

Grilled Salmon Kyoto

We loved this, but with my changes. I used olive oil instead of butter and I also used fresh mushrooms, about one pound, sauteed first.

Tomato Pork Chops I

We really liked this a lot. However, I did use fresh garlic and added it when I was sauteeing the onions and peppers. I also added Italian spices to the sauce which gave it an extra zip.
