About this Cook
I've been married over 40 years to a wonderful man, have two fantastic grown married daughters, two super grand children and two great sons-in-law.
My favorite things to cook
Anything Italian, anything Greek, anything w/seafood, vegetarian and grilling. We try to grill everything we can in the summer; winter too unless the snow is too deep to manage getting to the grill.
My favorite family cooking traditions
We don't have any special traditions, but my family and friends say that my chicken w/artichokes and mushrooms, bouillabaisse and paella rock (their word) along with my banana cream pie, a special chocolate cake and my banana bread. They also rave about my bread puddings.
My cooking triumphs
I developed the best fresh apple bread I have ever tasted. At least that is what my family and friends say. I just haven't had the courage to share it.
My cooking tragedies
I made this cheese, onion and egg pie, that was so bad I actually spit it out. Fortunately, it was only for family. We ordered pizza and had a good laugh.

Mimi's Zucchini Pie
This was delicious. Like another reader, I put a center layer of tomatoes and Parmesan and then more tomatoes and Parmesan on top. This is good for brunch, lunch and dinner. Just use a little imagination on the "go withs". I see lots of possibilities in substitutions using the basics.

Mashed Potatoes with Fried Mushroom, Bacon, and Onion
This was fantastic. But like many others, I added some milk since the mixture was too stiff without it. I also added course ground garlic salt for a little added zip.

Grilled Salmon Kyoto
This was fantastic. My husband is not very fond of salmon, and he loved it. The flavor was out of this world. I will certainly make this again.
