This pie is simple and delicious, a perfect summer pie. I used canned instead of fresh peaches and it was still great.

A quick recipe, but not too much flavor, besides the blueberries. Adding a little sugar on the top before putting them in the oven helps to sweeten it up, and yes it does need tweaking. The mix after adding the egg white mixture was too dry and I had to add more egg whites. Using all whole wheat flour can make them too bready, maybe doing half wheat and half white; I'll let you know when I try!

I cut this recipe in half and made it in an 8 inch round pan, the cake itself baked very well, but it tasted very eggy, and there was no vanilla in this so called "vanilla sponge cake". Next time I will definitely try adding some vanilla and maybe not so much eggs. I give it a 4 because the people I made it for liked it.
