Cajun Chicken and Sausage Gumbo

Hi everyone, I am the author of this recipe and from reading the reviews I thought I would add...the roux color is really dependent on how you would like it. I used milk chocolate as a reference as that's our family preference. If you would like it darker then you would just keep a stirrin until it's a color you would desire-it also intensifies the flavor. Also, if you do not like it thick then reduce the flour/oil ratio to maybe 1/2 c. flour to 1/2 c. oil. Thanks to everyone for trying the gumbo!! Jodi

Pea Salad I

This was yummy! I altered to make more figure-friendly: turkey bacon, ff mayo, egg whites, and lowfat cheese. I also added about 1 T. Ranch dressing to give it a little kick! Very nice with BBQ! Thanks!

Creamy Chicken and Wild Rice Soup

Wow, this was amazing, I wasn't sure what the outcome was going to be considering it was simple and had simple ingredients. I also added onion, garlic, and celery as another suggested. I also used the chicken base in water rather than chicken broth-so I omitted the salt. I also seasoned the chicken breast with Montreal Chicken Seasoning from McCormick-very nice! Will make again and will try using with different Wild Rice mix flavors!

Angel's Yummy Bruschetta

This tasted just like the bruschetta in a small Italian restaurant near my home! It is absolutely marvelous-never any left! It is also very easy to make-I mix the cheese into the tomato mix right before I put it in the oven. Thanks for the great recipe!

Mouth-Watering Stuffed Mushrooms

This was an easy appetizer to make!! I wanted something to go with spaghetti and meatballs and this was a hit. I added bacon bits and green onions to the mix and it was a wonderful addition. I would recommend adding a T. or so of Worcestershire sauce (that was personal preference). Thanks!!

Chicken Lo Mein

This was a wonderful and easy recipe to make. I have made this more than once and each time used different veggies. I like to use frozen-whatever I have in the freezer and reduce the amount of liquids. I also like to add chunks of white onion as this is our preference. Thanks!

Italian Spaghetti Sauce with Meatballs

Wow this was great! I used dry Italian seasoning to taste to kind of round out the sauce more to our taste. I also added 2 (8oz) cans tomato sauce to give more liquid. Did use a recommendation from another poster and added red wine. This is a keeper-great comfort food!

Pork Chops with Burgundy Mushroom Sauce

Very yummy, tastes like restaurant quality. I added minced garlic to the mushrooms to give it a little kick. I will also double the sauce next time as another poster suggested. I served with Garlic Green Beans from this site and loaded mashed potatoes!!
