I love to cook new things - I have a few select recipes I keep going back to, but discovering new and exotic things to make for dinner is my favorite thing to do!
My favorite family cooking traditions
Pumpkin soup. I know - it sounds gross, but it's all about going in the fall, picking out the perfect pumpkin, and eating a hot bowl on a cold day!
My cooking triumphs
I tried my hand at a Groom's cake and feel that it was a success. I'm also quite proud of my twin heart cakes made for a Valentine's Day/50th Year Anniversary - one strawberry cake heart and one red velvet cake heart.
My cooking tragedies
I attempted a soup with beans...I'd never used uncooked beans before and didn't know they needed to be pre-soaked! It also took me an embarrassing number of times to find out that you can't just raise the temperature of the oven to cook things faster...my poor family has eaten their share of dried, crusty chicken!

Chicken Enchilada Casserole I
5 stars with the following changes: omit the onion, add a layer of black beans (1 can is enough), and top with cheddar cheese. A lot of people said the sauce was too runny - those are usually the same people who substitute shredded cheese for the velveeta. I used velveeta and it was the perfect consistency. My suggestion is if you're going to substitute shredded cheese, omit the chicken broth and drain the can of tomatoes.

Good Old Fashioned Pancakes
I used this recipe and changed NOTHING and they were awesome. SO easy to throw together - it inspired me to make breakfast at home more often.

Homesteader Cornbread
This is excellent cornbread - SO moist and full of flavor. I'm going to reduce the sugar to about 1/3 cup next time. We like to top ours with butter & brown sugar, so the cornbread itself doesn't need to be very sweet.
