I am a Culinary graduate and now work in catering. I love to cook and bake new and challenging things. A few years ago I lost a large amount of weight, so my daily challenge is finding tasty recipes that are tasty and also healthy. I like to tweak classics and make them waistline friendly. That's not to say I don't enjoy a full-fat or full-sugar treat. Everything in moderation.

Chicken with Quinoa and Veggies
This was SO filling. Very good. Next time I'll wait to add the feta. I like it less melty.

Cashew Chicken I
This is AMAZING!!! I used salted/roasted cashews, unsweetened coconut and ritz crackers. Seriously so good! This is going into my dinner rotation.

Jambalaya
This was fantastic! I didn't bother with the file, and next time I'll use a little bit less chicken broth (rice was a little mushy for my taste), but the flavors were spot on.
