Ham and Broccoli Bake

I had some leftover ham in the freezer from Easter, so thought this sounded like an easy, comforting dish. I made my own cheese sauce with half chicken broth, half 2% milk, and some sharp cheese along with the Colby-Jack. This was surprisingly good, and fast. I will keep this one and maybe try leftover chicken next time. Thank you mrsembee!!

Hamburger Mac Skillet

Sometimes hubs gets hungry for what he calls "goulash" (he grew up in the 40's-50's=hamburger/macaroni) I found this and thought it sounded pretty good. I added some chopped celery and minced jalapeno. Also onion and garlic powder, and chili powder. We doubled the recipe as I had a full lb of ground beef. Sprinkled grated cheddar over top and put in oven for about 5 min. to melt and brown a little. Very homey, comforting dish!

Sugar and Spice Muffins

Very good! I used cinnamon instead of nutmeg- tastes like a snickerdoodle muffin!!! Just the right amount of sweetnes, and nice texture.

Hashbrown Breakfast Bake

Delish!! Added some minced jalapeno and onion to the bell pepper, and garlic powder to the seasoning. Very much like the "Loaded Hashbrowns" at our favorite brunch buffet here in Austin!

Chocolate Cobbler

So simple, but delicious!! Only change, but it was a biggie for us, I subbed boiling leftover coffee for the water. My sauce was fairly liquid, but that was okay as we spooned more over the scoop of vanilla ice cream we put on top. Next time I am going to try doubling this, as it was barely enough for four of us. I baked mine in a round 3 qt. casserole which seemed to be just right. We will have this a lot!! Thank you dylansmom!!!

Eggless Peanut Butter Cookies

Wonderful! I used this cookie base to make my son his favorite peanut butter cup cookies, because I didn't have any eggs. Great flavor, and easy dough to work with. Didn't have to chill it like I usually do the other dough. I'll remember the buttermilk/baking powder sub incase I ever run out of eggs again! Thank you L.J.!!

Reindeer Snack Mix

So Yummy! I love the addition of the Bugles and I was glad I could find them. I put about a tablespoon red pepper sauce in to up the spiciness. I'm glad I made a double batch to give away, with plenty left for us to enjoy too.

Baron's Blackberry Cobbler

What a treat this time of year! I found black berries on sale and thought I'd give this a try. I also added a 1/2 pint of raspberries and some frozen strawberries so I'd have plenty of filling. We enjoyed a scoop of vanilla ice cream on top. Thank you Baron!!

Salsa Bread

What a surprise this was! I really liked it, my DH and son not so much. I halved the recipe as this was a snack for watching football. I sprinkled some garlic powder, onion powder and chili powder in a couple of tablespoons melted butter, and poured that over the top before adding the cheese. I would like to try this same idea and make pizza bread next time. Thank you SSTACI!!

Bar Harbor Cranberry Pie

My grandma gave me this recipe almost 40 years ago, and I had misplaced it. I am so thankful for finding it!! A little bit sweet, a little bit tart, but so delicious!! We always have ours with a scoop of vanilla ice cream on top. Her recipe called for walnuts, and more cranberries I believe. I'll buy extra to put in the freezer now so we can have this again at Christmas! Thank you for sharing Amy!!

Pumpkin Cheesecake I

I halved the filling portion of this recipe and used a homemade graham cracker crust for this. It was awesome! I also used 1 tsp cinnamon, and 1/2 tsp each nutmeg, cloves, ground ginger and allspice instead of pumpkin pie spice. If I make it for a large group I will try it with the shortbread pecan crust. I bet its yummy!!

Taco Soup II

Terrific & easy. I added a can of beef broth and some chopped carrot, celery and shredded cabbage for more vegies. Skipped the hominy as hubby doesn't care for it.

Inside Out Ravioli I

Surprisingly delicious! I did not cook the spinach separately- I simply put the defrosted spinach straight out of the package in the bottom of my colander and then dumped the cooked pasta over the top. I did mix in about a cup of cottage cheese inwith the pasta-spinach mixture, and seasoned with some garlic powder and Italian herbs. I put fresh basil in my sauce towrds the end, as well as a pinch of red pepper flakes. My son gobbled this down, saying it was almost as good as homemade lasagna, and not nearly the work. Thanks for sharing Amy!!

Fiesta Macaroni

Very easy, comfort food dish. I had some leftover homemade chili and also subbed shredded Colby-Jack cheese. Added some chopped onion and garlic powder to the ground beef saute. Made a large casserole which we enjoyed leftover for lunch. Thank you!

Jackie's Sausage Soup

So hearty and good! First big pot of soup of the season and this was a great choice. Added lots more veggies; celery, carrots and garlic. I used large elbow macaroni. Loved the spinach. We had crusty Texas toast to soak up all the broth. Even better as lunch today.

Pumpkin Crunch Cake

So Yummy! Followed recipe exactly except for using half brown sugar and half white. I also don't buy pumpkin pie spice, I use 1 tsp cinnamon, and 1/2 tsp each cloves, allspice, ground ginger and nutmeg in all my pumpkin desserts. We love the crunchy top on these type of desserts.

Gourmet White Pizza

Yummy!! I made my own Alfredo sauce. We also topped our pizzas with some red bell pepper and julienned Canadian bacon strips. Love, love the feta on this!! Terrific and cheap gourmet chicken pizza!!!

Joan's Pesto

I would give this 5 stars, but as written, the basil to olive oil ratio is way off. I probably used close to 4 cups packed basil leaves, and maybe half the evoo. I also added a pinch of red pepper flake. Froze half this batch for this winter when we need a pesto fix. The color of this sauce is just verdant green!!
