Chocolate Cornstarch Pudding

So good! Followed recipe except I added 1/2 tsp cinnamon-just love chocolate with it. Thickened up wonderfully- you have to bring mixture just barely to a boil. So glad I tried this instead of buying a box!

Becca's Taco Soup

Yum! Skipped the corn-just don't care for it. Added other veggies-garlic, celery, carrots, peppers and shredded cabbage and another can of beans (black). Like using the tomato juice. Served over tortilla chips and topped with shredded cheese.

Hearty Ranch and Bacon Potato Soup

Excellent flavor and ease to prepare. I used some of the homemade turkey stock I had made, and cubed cream cheese/ 1 c milk in place of the half and half as I needed to use it up, and lower fat content. I also added 2 carrots chopped to the veggies. We really enjoyed this soup!

Peanut Butter Cup Cookies I

Tasted great but the dough is a little soft as is. I just used a lot of sugar to roll them. I too appreciated not using the mini muffin tins. These are my oldest son's very favorite. Made exactly 3 dozen. Will have to double recipe next time!

Snickerdoodles II

Excellent! Only change was I subbed 1/2 cup butter for half the shortning as That's how I have always made my snickerdoodles. Makes a lot, even though hubby rolled very big balls when he helped me! My kids will really enjoy these!

Cream Cheese Pumpkin Muffins

These are wonderful! Like pumpkin cheese cake in your hand. I followed recipe except for adding vanilla and about a tablespoon of flour to filling as others have suggested. Had no problems with filling squishing out and I got 12 good-sized muffins. They did "deflate" a little when they cooled so looked a little smashed, but tasted great! A new fall season treat.

Cauliflower-Cheese Soup

Excellent! Actually this tasted a lot like a baked potato soup we love. I doubled the ingredients so we would have some leftovers. I subbed chicken broth for the water after reading reviews. I also sauteed the onion with some minced garlic in the butter, then added the flour to make the roux. I mashed the veggies with a potato masher, and combined everything without using a blender-the soup was a little chunky, the way we like it. I then added some cayenne pepper and cajun seasoning. The seasoning was perfect-just a little bite and enough salt.

Shepherd's Pie IV

Very good-a rib-stickin hearty dish. I cut everything in half and it still made a lot! I used beef broth in place of cream of mushroom, after sprinkling a little flour in. I also added some sliced fresh mushrooms instead of green beans, and a tablespoon or so of worcheshire. Loved the addition of cauliflower!

Spicy Vegetable Beef Soup

Terrific flavor! Loved the spiciness! I used fresh veggies, including a minced jalapeno (hubby threw that in!) I doubled the recipe as it seems impossible for us to make a small pot of soup. The broth is just excellent in flavor-which is what makes my DH happy!

Creamy Asparagus Pasta

This was very good, with a few changes. I lightedned it up by using half milk-half chicken broth as the liquid. Then added 4 oz. low fat cream cheese. Doubled all the garlic and seasonings, and added some cajun seasoning and red pepper flake. I also added 1 cup mozzarella and 1/2 cup parmesan to melt in and thicken sauce. The lemon juice at the end is a must-it really pulls all the flavors together.

Easy Red Beans and Rice

It was easy and good. I cooked my own red beans first, & I used hot turkey sausage and also added a minced jalapeno and some cajun seasoning as we like our red beans really spicy. I still had to had a splash of hot pepper sauce when I served. This is a good basic recipe that you can easily adapt to suit your family's tastes.
