This goes into the rotation for sure! Easy, no hassle meal that is husband approved. I followed previous reviews and did 1/2 lite mayo, 1/2 non-fat sour cream and also added a little extra garlic powder to the mix.

Yum!! Just what I was hoping it would be! My husband suggested adding sausage next time; worth trying! I still found it to be salty, though I used No Sodium broth (canned tomatoes are salty too).

Very nice and refreshing. I didn't add the oil, pickle or tomato. Might try adding pickle and tomato next time, but didn't miss the oil. Nice crunch to it.

Beer-battered Fish Tacos with Tomato & Avocado Salsa

The flavors are great. I used Pabst Blue Ribbon beer and would use that again. The breading didn't stick to the fish, this was the only problem I had. The salsa was also really good. Served with black beans, corn, salsa and mexican veggie salad.

Macaroni and Cheese with Veggie Bacon

I used this basic recipe, but omitted the veggie bacon and added mushrooms instead. I also halved the recipe and used 7 oz of smoked gouda and no cheddar. it was AWESOME. Next time, i'd like to try it with shrimp, bacon bits, and more mushroom.

Blackened Salmon Fillets

This was REALLY spicy...if i made it again, i would drastically cut the amount of cayenne. I drizzled with olive oil and sprinkled with spice then broiled for about 6 minutes each size. I let it sit in the oven (with broiler off) for an additional 5 minutes (i like the salmon to be pretty well done). Good overall flavor.

Chipotle Crusted Pork Tenderloin

This was good; it didn't blow my mind though. I marinated it in a mixture of pineapple juice and brown sugar for 2 hours (turning once), then baked in a 350 oven for an hour and 15 minutes. Might be tastier on the grill, but it's only March!

Black Beans and Pork Chops

This tasted good, but I thought the other flavors over-powered the taste of the pork. But it's quick, simple and full of protein. I rinsed off the beans, then added a bit of water to the pan in an effort to reduce the overall sodium content.
