Mexican Chicken Corn Chowder

This is one of my favorite soup recipes. It's super easy to throw together. I made changes based upon what I had on hand and it's pretty low fat. I used ground chicken instead of chicken breast, chicken stock instead of bullion and water, fat free half and half, about 1/2 bag of Trader Joe's roasted corn (this is what made the soup amazing) instead of creamed corn, no cumin as I didn't have any and about 1 cup of salsa instead of tomato since I didn't have one. I've done it with the cheese and without and it's good either way.

Mini Cheesecakes I

These are so cute! I used the mini Nilla wafers and the mini baking cups (1 5/8"). The wafers fit into the bottom of these perfectly. I made the batter per the instructions, used half to be topped with cherries. The other half I added in the zest and juice of two limes. I baked them for 9-10 minutes. Then, sliced a small piece of a third lime to decorate the top of each lime cheesecake. Both the cherry topped and lime cheesecakes looked great and very festive together. (I made these for a Christmas Eve party) Definitely a good basic recipe.

Chicken Enchiladas II

I have been looking for this recipe!! I had a friend years ago that made chicken enchiladas just like these - I had the recipe and lost it. This recipe tastes identical!! I added a bit of cumin to the sauce, that's the only change. I told my boyfriend LOVED these. He's not normally a big enchilada fan, but went back for seconds. These are super yummy!!

Baked French Toast

Wow! This was great! I really didn't know what to expect because of the mixed reviews. I used more half and half, less milk and more cinnamon (I can't give measurements as I did a splash here and pinch there). I sliced the bread about 1 1/2 inches thick and turned the bread after about an hour of soaking in the egg mixture. The sugar mixture really makes this dish. It puffed up while baking and smelled wonderful! I bit of advice, the inside of the toast is a custardy..it reminded me of a bread pudding. Regardless, it's really good!

Christmas Breakfast Sausage Casserole

This is yummy! I added two more eggs as I only had large size eggs in the fridge. Did everything else as the recipe states. It didn't take the full time to cook. Definitely a keeper!!

Banana Crumb Muffins

I made these for Christmas for my boyfriend that was working (he's a firefighter). I made them exactly as stated and they turned our wonderful. He said they tasted like a coffee cake with a banana flavoring. I used bananas that weren't extremely ripe...next time I will use bananas that are very ripe to enhance the banana flavor. This will be a staple when I'm cooking big breakfasts!

Banana Banana Bread

I made this last night and it is SO yummy! I did add 1 tsp. vanilla and about 1/2 tsp. cinnamon. I used 4 medium bananas, which equalled about 2 cups. I baked them in 4 small loaf pans and brought some in to work - otherwise I would eat them all!

English Toffee

Super easy! I couldn't find my candy thermometer, so I was at a loss knowing the correct temp on cooking the mixture. Once it hit an amber color I poured it onto a jelly roll pan lined with heavy foil and greased. I had no problem with the candy being greasy or removing it. Definitely will be redoing it again next year for holiday gifts.

Pumpkin Fluff Dip

Too Much Chocolate Cake

Very rich and yummy! I made this and ate probably half of the cake myself. I followed it exactly except used mini chocolate chips and also topped it with the Satiny Glaze recipe that another reviewer referenced below. It was still moist 2-3 days later. Microwave a cake slice for a few seconds to melt the chocolate chips. SO good!

BLT Dip

I made this dip for a 'sweet and savory' contest and WON!! I should have doubled the recipe because it went...and went quick! I stuck with the recipe except added some scallions and salt and pepper. Served with toasted baguette slices and bagel chips. The recipe is even easy to give out..just one of everything!

Warm Blue Cheese Dip with Garlic and Bacon

This is SO yummy! My grocery store didn't have chives, so I added in a shallot with the garlic. I think next time I will double the recipe because it went so quickly. As previous reviewers noted, even people that don't like blue cheese will like this dip. I served it with baguette slices, brushed with olive oil and toasted. All turned out perfectly! Great recipe!

Best Big, Fat, Chewy Chocolate Chip Cookie

These are awesome! Very big, although mine were not chewy as everyone else noted. I may have cooked them a little too long - the edges never got the 'light golden' color referenced. Regardless, they were still really good!!
