Unbelievable Chicken

This recipe was a huge surprise to me, the flavor was awesome!! Everything in it seems so basic, yet the taste is nothing but! It tastes like something you'd order at a restaurant. I will make this again and again.

Sweet Restaurant Slaw

This was the best slaw I've ever made. I did use mayo and celery seed (didn't have poppy). I let it marinade for about 4 hours. I will never make another slaw, we loved this!

Easy Baked Tilapia

This one gets 5 stars just for the sheer ease of it. I did just the fish and it was so easy and turned out great. I didn't have any Old Bay, so I used McCormick seasoning for chicken and fish, and it was perfect.

Burgundy Pork Tenderloin

I loved this! I put it in the slow cooker this morning and just added 2 cups of beef broth with it to make sure it was covered. 9 hours later, it was absolutely perfect.

Grilled Venison Backstrap

Fantastic, couldn't even tell it was venison. I didn't have apple cider available, so I just used frozen apple juice concentrate and it worked great.

Gypsy Soup

I have been searching for a vegetable soup recipe and have finally found one! This is terrific. I followed the recipe to a T, with the one exception of soy sauce (didn't have any tamari). The smell and the flavor is totally different that any other vegetable soup I've had. I did have to cook it for an extra half hour to get all the veggies cooked through, but other than that, it was a breeze to make!

Chuck's Favorite Mac and Cheese

I have finally found a mac and cheese recipe that I can make healthy! This was so easy to alter to keep the fat down and add additional nutrition. I used whole wheat noodles, low fat cottage cheese and fat free sour cream. I blended the cottage and cheese and sour cream to gain a better consistancy for picky kids (it came out like ricotta). Then, I added southwestern seasoning salt, italian seasoning and garlic powder. I mixed a half a cup of 1% milk to make it creamier. I used 4 oz of low fat mexican cheese blend, 4 oz of italian cheese blend, and 4 oz of colby jack (I didn't have chedder or parm). I even added a cauliflower/zuchinni puree to the mix to add a little more nutrition. The kids didn't know the difference - said it was their favorite mac and cheese!

Pumpkin Flax Quickbread

This recipe is awesome as is, and with any personal touches. I made 2 batches to start with - 1 as written with a loaf and it was perfect (just cut back the sugar by a quarter and subbed half the sugar for splenda). The other I added a 1/4c unsweetened cocoa powder to it and made mini muffins and they were phenomenal! The best part about this recipe is that it's so moist and delicious and really good for you, too. This is such a great Fall treat!!

Fresh Asparagus and Chicken Casserole

I changed this recipe a lot, but it's a great base recipe. I didn't want a lot of fat, so I only used 1 tsp of olive oil and fat free sour cream. I was a little concerned with the recipe being soupy, so I mixed 2 tbl of flour with the sour cream before adding and it worked great. I added garlic, shallots, fresh mushrooms, italian seasoning, season salt, and extra marjoram. Once I cooked the veggies and chicken, I added the broth, sour cream and spices, then I let it simmer for a little while to thicken a bit. I mixed the cheese in the sauce. Once it started to thicken, I combined with Whole Wheat Rotini in a casserole dish. It turned out great. Next time I'll triple the chicken (there just wasn't enough) and cut the sour cream in half (a little too mcuh). Great recipe!

Chicken Pot Pie IX

Excellant! I did follow the reviewers suggestions and cooked the chicken and veggies in the chicken broth. For speed, I used a bag of frozen mixed veggies and then added some chopped potatoes. I also used the pillsbury pie crusts that you just roll out. That's a must - so easy! The whole family enjoyed this, even my picky 4 year old. We'll be keeping this one handy.

Barbecue Beef Cups

We really liked this recipe. I paid attention to the other reviews and added my own twist to it. After filling the muffin cups with dough, I baked the dough by itself for 2 minutes before adding the beef filling. This made sure the entire bottom was firm and cooked thru. I added chopped onion, green pepper, garlic, crushed red pepper, worstechire sauce, prepared mustard, honey, and hot sauce. I mixed the cheese in to the beef mix. This made it turn out kind of like a sloppy joe. It tasted great! Also, I used butter crescent rolls, and the cup was perfect! This is a winner!

I can't stand venison and this was perfect for me. I had no idea there was venison in this. It was excellant. The long list of ingredients can be scary, but it's really not that hard and well worth it. I will make this again.

Chicken Fettuccini Alfredo

I was really scared of this recipe when I saw a lot of low ratings at the very top, but I'm so glad I tried it! The people that gave this a low rating must not know how to make a sauce, because it turned out fantastic! The key is constant attention. I cooked it on a low-med heat and constantly stirred it. The flavor was excellent!! I added broccoli, instead of tomatoes and just loved it. I didn't think there was too much sauce at all (we like a lot). This one is a keeper!

Baked Ziti I

This is very easy and tasty, but I was slightly disappointed. With such great reviews, I thought for sure that this was going to something fantastic, yet it was pretty average. I will make it again, because it was good, but I may try using a better spaghetti sauce next time (I used the cheap kind).

French Beef Stew

This is excellent! I had a leftover pot roast, so I just used the meat, potatoes and carrots from that. Since they were already cooked, it made this very fast. I just added about 4 tbl of cornstarch to thicken (mixed with water). Besides that, I followed this to the letter and thought the taste was fantastic. This is a keeper!

Chicken Supreme III

Some of the reviews for this recipe were very poor and I have no clue what they are talking about. We love this one! I think it's very important before making a recipe to read other reviewers suggestions and try to follow the ones that sound good. Per suggestions, I cut the butter back to 1/2 cup, used cream of chicken with herb soup, and added some extra Italian seasoning to the chicken and onion while it cooked. This turned out fabulous! My family loved it and we are now putting it into the "rotation" to make it regularly. Thanks for the great recipe!
