Brown Sugar Meatloaf
I'm not normally a big meatloaf fan, but this was great! I used BBQ sauce because I didn't have ketchup and heavy cream b/c I was out of milk (and only 1/4 cup). I accidentally forgot the onion and added about a tbsp of worchestshire to the meat mixture. I put it in muffin tins and cooked for 45 min. I added the brown sugar/BBQ sauce mixture to both the bottom and top of each meatloaf "muffin", though I would recommend waiting until the last 15 min or so for the sauce on top otherwise it goes everywhere. I would also recommend putting a cookies sheet below the muffin tin in the oven if you go this route to catch any grease. I will definitely make this again!

Delicious Ham and Potato Soup
This was FANTASTIC! I know this will become a regular in my house - and I will probably always make potato soup like this from now on. It turns out to be the perfect consistency. I made some small changes. I omitted the celery (had none) and added celery seed instead. I added the bouillon at the very beginning and used 1 cup half and half in place of 1 cup of the milk. Yum! Next time I'll double it.

Grilled Portobello Mushrooms
I halved the vinegar because I knew it would be too much and and my boyfriend still could not eat it. I thought it was good, hence the two stars. As written (4tbsp vinegar) this would be inedible to us. Sorry!
