My favorite things to cook
I love to try new things and I love to cook with new ingredients/experiement. I dont have one favorite thing to cook as I go through phases. My husband has recently been diagnosed with Type II Diabetes so I have been working alot with Spelnda desserts and low-carb main dishes.
My favorite family cooking traditions
I grew up loving to cook and have been doing it since I was a kid. My mom is a good cook but does not take risks or does she experiement with new ingredients. I am just the opposite as I love to "play" in my kitchen. You just never know what I might create.
My cooking triumphs
I have a collection of what I call my "signature recipes" and these can carry me from a potluck get together to a full blown 5 course sit down meal in my home.
My cooking tragedies
Wow, too many to list but a Thanksgiving Apple Pie that went WAY wrong. I love homemade ice cream and use to make it a lot in the summer, since my husband has been diagnosed with diabetes, i have experiemented by trying to make low calorie, low sugar ice cream and so far NONE have worked. I have ended up with gross runny slushes on several occasions. I think I have finally realized there is no such thing as low calorie, low sugar ice cream. Oh well, I probably will keep trying. LOL

Charleston Breakfast Casserole
I have made this several times with many different variations. It is a great recipe that can be modified per your tastes and it still comes out great. A couple of important things. - Definitely use seasoned Croutons or a good Deli gourmet bread. - Definitely prepare the night before and then bake in the morning.

Broiled Tilapia Parmesan
I made this last night. DH and I are on the Mediterranean Diet so I made some substitutions for the butter (olive oil) and the Mayo (Miracle Whip lite). Incorporating fish 2x a week into our diet has been a challenge since we are not big fish eaters but this recipe is a keeper!! The substitutions worked great! Super easy to make also. A keeper for sure!

Beef Stroganoff III
Great recipe but the key is the mustard. I made it 2 times, the first time I forgot the mustard and was not too impressed, the second time I remembered the mustard and WOW, huge difference. It still amazes me how a simple ingredient can make such a difference.
