Extra Gingery Bread

Wonderful recipe. Many reviewer have left out the crystallized ginger because they can't find it. In my opinion the crystallized ginger makes this recipe extra special, so don't leave it out. It is also called candied ginger and can be found in the bulk section of many supermarkets. Thanks for sharing!

Grandma's Green Bean Casserole

This was really good. I love green bean casserole, but usually I am the only one who eats much of it. This year I used this recipe and there were no leftovers. I did put some fried onions on it as it just doesn't seem right without it. I also used the cracker crumbs. Thanks for sharing!

Libby's® Pumpkin Cranberry Bread

I was a bit skeptical at first as I didn't know if pumpkin and cranberries would be good together, but this was wonderful! The tartness of the fresh cranberries was a great contrast to the pumpkin. The only thing I changed was to replace the oil with applesauce. It was really moist and the oil wasn't missed at all. I also didn't have 2 pans, so I cooked it in a bundt pan for 60 minutes. YUMMY! Thanks for sharing.

Blackberry Puff Pastry Tarts

This was really great and easy. I had to use the pastry sheets because the store had no shells. I was being very lazy, so I cut the sheets into nine pieces each and basically made "raviolis' by putting one piece on bottom-adding ingredients-one piece on top and then pinched the edges together. They were much better cold. I shared them with the neighbors who loved them too! Thanks for sharing the recipe!

Best Lactose Free Blueberry Muffins

We just discovered our daughter is lactose intolerant. I was looking for a blueberry muffin recipe that she could enjoy. This recipe was really good. If you are concerned about the lactose, just substitute natural applesauce for the margarine. I always do this in recipes that call for butter, margarine or oil. Then you can also cut a bit of the sugar as the applesauce adds natural sugar. My daughter's only complaint was too many blueberries-I may have thrown a couple extra in! Thanks for sharing!

Thai Sweet Sticky Rice With Mango (Khao Neeo Mamuang)

Wonderful! Didn't make the sauce for the top. Tastes just like in the restaurants but much cheaper! Made it once with regular coconut milk and once with reduced fat coconut milk. The reduced fat didn't change the flavor. Thanks for sharing!

This recipe was great! I used 1/2 butter and 1/2 yogurt to cut the fat a bit, and pecans instead of walnuts because that's all I had. The loaf was beautiful and the middle did not fall. Thanks for sharing!!!

Chocolate Eclair Dessert

This is one of the easiest recipes I have ever made. I took it to a back to school luncheon at my daughter's school. I topped it with the Satiny Chocolate Glaze recipe from this site, as many reviewers said the frosting made it too rich, and I don't like store bought frosting personally. I also made it ahead of time and left it in the fridge for 24 hours. I was not there, but was told I needed to make 50 copies of the recipe as everyone wanted it. There were people who heard about it but didn't get to taste it, so I made another one today to share tomorrow. Of course, I'm going to get the first serving this time!!! Thank you so much for sharing your recipe. I now keep the ingredients on hand for a quick dessert.
