Crispy Fried Fish

Reviewed: May 24, 2011
Made this with red snapper for my daughter who loved it. Didn't have any cornflakes on hand, used cornmeal. Patted fish dry before coating and had no problem with batter falling off.

Delicious! Only had dried minced onion on hand and substituted bbq sauce for steak but it still turned out great. Marinaded for about 3 hours.

Easy Garlic Broiled Chicken

Reviewed: May 13, 2010
This is definately a once a week meal for us now. I did make a couple of changes; used skinless, boneless chicken thighs and baked it to prevent any smoking. Baked at 375 turning the chicken every 10 minutes for 30 mins and then broiled for 5 minutes on each side. Made for huband's lunch and he said the only thing he would have changed is to serve with rice to soak up the juice.

Chicken Fajita Marinade

Reviewed: Dec. 30, 2009
The marinade had an excellent flavor and my husband and 11 year daughter loved it. My daughter had it for dinner and said it heated up great the next day for lunch. Grilled the chicken until almost done than added it to sauteed veggies with the marinade and heated for about 5 minutes. The chicken was very moist. It wasn't as intense as we normally like so the only thing different I would do is leave it to marinade longer than the stated time - just our preference. P.S. Only had bottled lime juice and dried cilantro in the house and they worked great. Will be using this from now on. Thanks Olivia!

Best Steak Marinade in Existence

Reviewed: Oct. 11, 2009
Great recipe. Only marinaded for about 3 hours but steaks were tender and very tasty. Was initially put off by the color (combo of green olive oil and blended spices) but after tasting them I'm a believer.

Swiss Chicken Casserole II

Reviewed: Oct. 10, 2009
Was an absolute hit. Great meal to make when you need something that is easy and quick to make. Did exactly as written but only had chicken stuffing. Husband and his friend loved it. edited review: have made this many times and still remains a favorite of husband and friend who I feed (girlfriend doesn't cook at all). Have also used pepperjack and provolone and both have been hits. Must try this. Don't be fooled by ease and few ingredients, a weekly lunch staple for spouse.

Papa Drexler's Bavarian Pretzels

Reviewed: Sep. 10, 2009
My 10 year old made these for science class and they turned out great. Had to add additional flour like others but followed the recipe exactly. They didn't look pretty - she's only tne but they were great. Reheated them in the toaster oven on the 2nd day and they were great again. Tim, thanks for the recipe. P.S. my daughter was the only student in three years to do pretzels for the project - everybody else did sweets or bread.

Colleen's Slow Cooker Jambalaya

Reviewed: Aug. 15, 2009
This is in response to Katie1217's review on 06/16/09. If you note, Robin Millers recipe is from 2005 and mine was posted in 2004. After your comment, I searched her recipe and it is not word for word as you erroneously stated. Also, I would have to have ESP to post a recipe that did not appear until a year after mine.

Rosemary Ranch Chicken Kabobs

Reviewed: Aug. 15, 2009
Didn't have lemon juice and had to use dried rosemary (cut in half) but it turned out absolutely delicious. Husband used cold for sandwiches which were the best I've ever had. Definately a keeper - the flavor was perfect. Thanks Theresa!

Baby Back Ribs

Turned out great and so easy to make. Used a dry rub on them and let them marinate overnight and baked them without the sauce. Added the sauce when I threw them on the grill for a couple of minutes. A keeper!

Monterey Chicken

Loved it! Only made one change and used sliced mushrooms instead of chopping them. This was so easy to make and would be great to serve to guests. Only ate a small piece of chicken because I gorged myself on the veggies.

Slow Cooked Corned Beef for Sandwiches

Made this for my Irish mother who loves corned beef more than any other meat. She was more than a little worried about the amount of garlic and peppercorns. Her worries were totally unfounded, I didn't change a thing and she is still raving about it.

Buffalo Chicken Dip

Reviewed: Jul. 12, 2004
Followed the recipe as directed except I added a little more canned chicken (only had 13 oz cans on hand) and a little more hot sauce. Turned out great but I would cut the cream cheese down a little next time. My husband loved it but next time I'd try tostito chips as well as crackers.

Super Grouper

Reviewed: May 17, 2004
I probably shouldn't rate this as I differed on quite a few things but I'll share anyways. I brushed the fish as directed with the butter and lemon mixture and also added the spice mixture as directed. But rather than broil, I grilled the fish low heat for about 12 minutes - flipping it halfway through (I had it in a fish grilling basket). I omitted the extra butter and mayo at the end but I didn't even miss it. The fish was delicious. This recipe is so easy and I can guarantee that this will become a weekly favorite. I added a side of alfredo sauce over noodles with shrimp and garlic bread to finish out a quicky and easy dinner.
