Cha Cha's White Chicken Chili
I usually make my Mom's recipe for white chicken chili, but have always found it too much like a soup, rather than a chili. Tried Cha Cha's last night and it was fantastic! Maybe it's not quite as thick as chili, but it's really close. I put in 2 1/2 cans of navy beans and then smashed up the other 1/2 can, which helped to thicken it. Also, I used 2-3 teaspoons of the jalapenos and green chilis, rather than the amount called for. In addition, rather than chicken broth, I used store-bought chicken stock. I also cooked it for an hour, rather than the time called for. When it was done, I spooned it in individual bowls and hubby and I added cheese and sour cream to our liking. This was fantastic, only takes one pot to make, and will definitely be made again in our house!
