Creamy Au Gratin Potatoes

Great basic recipe... I doubled sauce portion, and only used 4 BIG russet potatoes, also used equal portions 1/2 and 1/2 and milk, sauteed onions, garlic in butter, added mustard powder and paprika. Salt and pepper on raw potatoes that I soaked in water first. Baked for time listed, but took cover off to brown top. yum yum... I guess this makes this MY recipe...but like I said....great starter.

Fried Rice I

Perfect recipe....I double this and make sure to add extra bacon. A definite hit with the family.... I make my rice in the rice cooker and refrigerate for a bit.

Chicken and Biscuit Casserole

This was pretty good. However, the basil killed it. I would think a pinch of fresh thyme would have worked much better. I will make this again, but totally omit the basil. And I LOVE basil, just not in this recipe. Oh and it makes A LOT.

Rich and Simple French Onion Soup

Onions took an hour to caramelize. PERFECT. I toasted the bread beforehand, brushed the slices with olive oil, sprinkled with reggiano parm...then baked...When I was ready to serve...plopped the bread in, topped with swiss...heaven.

Caper Chicken Cacciatore

Very interesting....I was skeptical..but it turned out just fine with my modifications. I used b/s chicken breast and used my rolling pin to pound it out a bit. Dredged in flour fired in olive oil, removed from pan - sauteed onion *garlic and mushrooms. added all other ingredients, brought to a simmer then I added the chicken. Simmered with lid on for 20 then threw it in the oven at 350 for 20 more minutes. The chicken was falling apart! It was delish. Oh and I only used about an ounce of pepperoni because I was a tad scared of using it in anything other than a pizza dish!

Um, YUM!!! added a dash of Worcestershire and did not have green pep on hand so omitted it. Melted sharp cheese on top. Thanks!

5 PLUS stars....I have made this no less than 20 times. Made it again tonight and had no shrimp on hand, so omitted it. GREAT for vegans that way too! I put in a little extra cumin and dijon....YUM

Oatmeal Craisin Cookies

I am NOT a baker and not a big fan of sweets, but this was good. I added 1 bag of white chocolate chips and some chopped pecans, soaked my crasins in OJ first and omitted the raisins. Pretty darn good!

Tofu and Rice Stuffed Peppers

This was good! Made a bunch of changes - cut the tops off the peppers and chopped the tops (minus stem =)sauteed with garlic and onion. One can diced tomatoes one can sauce. Added fresh basil, dried oregano, bay leaf, pinch red pepper flakes, salt & pepper to sauce - mixed in rice and cheese. Blanched the peppers and drained before stuffing.

Chicken Tacos

WOW! I was skeptical of the lemonade - this was really different and delicious. These are the modifications I made: 4 B/S chicken breasts - boiled in chicken stock and 1 bay leaf. (then Shredded chicken) - sauteed onion/green pepper in oil, added chicken a good tablespoon or so of Bill's Taco-Seasoning-I (from this site) + the lime, lemonade, Worcestershire - sauteed and reduced the liquid to more than 1/2. It was Delish!

Peach Cobbler VI

Very good! Used fresh nectarines and strawberries from my garden. Melted the butter in the 9x13 baking dish..in the oven, then added it to the flour mixture...when it was ready to put in the oven..I sprinkled brown sugar and cinnamon on top....baked twice the amount of time this called for. Oh and I didn't have any milk - so I used 1/2 and 1/2

Connie's Zucchini 'Crab' Cakes

These were fantastic! Really great way to use up all the zuc's from my garden! Drained on paper towel for 1/2 hour and added minced green pepper to the rest of the mix. As one reviewer commented to add more Old Bay - I say NOWAY! I added two tbs. and it was WAY too salty. But other than that - delish.
