Phyllo-wrapped Halibut Fillets with Lemon Scallion Sauce

Halibut is typically mild and can dry out easily when baking. We readily have available fresh pacific northwest halibut and I get tired of the same ol' dill/mayo/butter recipes. This one was A KEEPER! What a great way to keep in the moisture, and add an alternative flavor. Thank you!

Clone of a Cinnabon

Good cinnamon bun recipe. In order to get the "Cinnabon" texture I believe you have to undercook these. I don't care for cinnabons, so I cooked these fully and yes - they were delish just as a regular cinnamon bun!

Sicilian Homemade Ricotta Cheese

Wonderfully easy recipe and fun to make. Very mild flavor, and a bit dryer than store-bought ricotta, but perfect for anything you make with cheese as the ricotta simply absorbs the flavor of whatever dish you're putting it in. We made quesadillas, burgers, casseroles, etc...and the cheese was a perfect substitution for all other expensive cheeses we would've put in. Very pure, low-salt, mild flavor, and we ate onit for well over the week expiration. Keep in an air-tight container and it will last for almost a month!

Overnight French Toast II

I made this for Christmas morning last year and although it had good flavor, it was a bit dry if you are using a full loaf of store-bought french bread. This year I made it for a brunch and added EASILY five more eggs and half cup of milk. Turned out PERFECTLY moist and fully baked. Not dry bread on top! got rave reviews!

Chicken and Corn Chowder with Thyme

This didn't look as good as it tasted. The cream didn't set well with the chicken stock and I def had to use a thickening agent. Next time I would cut the stock and add more cream. This was like a chicken soup with corn, not a chowder.

My family has deemed it mandatory that we make these every Christmas Eve (family potluck). Keep them warm by wrapping in foil and setting it in slow cooker.

Flax and Sunflower Seed Bread

I use flax seed instead of sesame, and add 3 T gluten. I now make this as my main bread for sandwiches and toast and no longer buy store bread. I also set the machine to light color, and a 1.5# loaf. My in-laws have fallen in love with it as well and consider it such a treat when I bring them a loaf.

My Best Clam Chowder

Perfect recipe. We go clam digging and use fresh clams, but still need to add clam juice from the bottle. Even more than the recipe says. (Simply because we are using fresh, and not canned clams that have been sitting in clam juice for an eternity.) Do the bacon thing and cook strips first, then sautee veggies in grease. (As others recommended) My husband and his office loved it and asked for the recipe.

Beer Batter Fish Made Great

I used all of the suggestions from the other reviewers to not make it soggy: I dipped it lightly in flour before dipping in batter, I only used egg whites, and I drained on paper bags. The grease temp was perfect, and the flavor was ok...but they were soggy. The fish was wonderful once I took off that wet blanket of fried batter.

Award Winning Peaches and Cream Pie

Definately tasty. A great change from your average pie or cake for dessert. Very refreshing with your summer BBQ. Who likes hot cobbler on a sunny day? Chilled peaches & Cream Pie hits the spot. VERY easy. Great to make in advance (you know that's my favorite thing) for that summer party.

Veal Forestiere

Yea, I subbed also...red wine & water & boullion cube. This recipe reduced wonderfully & made an excellent sauce over the BREADED veal (that's right, carb-freaks!)and side of ORZO Pilaf. Used 1/2 butter 1/2 grapeseed oil. Just depends on what flavor you are going for, and what you have on hand. very easy to sub ingredients. I'm sure the Marsala is excellent also. I highly reccommend this recipe.

Chocolate Raspberry Treats

I am usually a wuss and only make recipes with multiple reviews. Well, I knew if I wanted to bring brownies to a potluck, they better be different. (And good) Someone else DID bring boxed mix brownies (Pa-lease), and mine were the first to go. (Hers were hardly touched.) I highly reccommend this recipe. It turned out beautiful & tasty. I made it in a springform because I do not have an 8x8 dish. Served on a cake tier with powdered sugar. Beautiful.

Pita Chips

I had seen pita chips in the store, and knew they were becoming popular. WELL instead of heading to the store for them before a poker party I was going to, I decided to just make this recipe. Someone else brought the bagged ones from the store...and MINE were the only ones touched!!! Everyone preferred MINE! SO HA! This recipe rocks. I subbed Grapeseed oil (what I had on hand), Johnny's seasoning, Italian Seasoning, & pepper.
