Vickie's Beer Bread

Reviewed: Nov. 12, 2009
I made this when I had a Pampered Chef party once and the consultant thought I had used a PC mix for it. Why spend $6 for 2 loaves when you can make a loaf for pennies! It makes a great gift for people too.

Light and Fluffy Spinach Quiche

Reviewed: Nov. 1, 2009
Based on other reviewers, I added one more egg and sauteed the onion and spinach with garlic in butter. I do agree that it is to much spinach as others have said. I used a deep dish pie plate and there was plenty of room to hold it. I thought it was pretty good but not sure I'll make it again.

Hot Buttered Rum Batter

Reviewed: Oct. 31, 2009
This is very good but I think the recipe is off saying confectioners sugar, I think it should be granulated so that's what I used. I wasn't sure how it would work with the powdered sugar. I did like everyone said and used 2 T per cup of the batter and the spiced rum. YUM. It's not what my husband calls hot buttered rum but it's good.

Chicken and Broccoli Braid

Reviewed: Oct. 27, 2009
Don't leave out the dill but you can sure omit the onions as it has enough flavor with out it. I never do the egg wash and leave out the almonds too, you won't miss them. Also, Miracle Whip is a better choice than mayo in this IMHO.

Slow Cooker Chicken Taco Soup

Reviewed: Oct. 24, 2009
I think it was just average. To be fair, I couldn't find 10.5 oz cans of tomatoes with green chilis so added both 14.5 oz. cans. To me it was a little to tomatoey (is that a word?)I used my immersion blender to chop most of them up since my husband won't eat chunks of tomato, maybe that was part of it. It seemed like it was lacking something too. I don't like to spicy either so didn't want to add much. I thought 3 chicken breasts were to much chicken also. I guess I should have gone with my gut and only used 2 and not all the tomatoes. I also didn't like the sour cream in it. I usually love it on everything so it surprised me. It did whip up quickly but I don't think I'll make it again.

Chicken Pa Nang

Reviewed: Oct. 13, 2009
I found it very bland. Perhaps the brand of curry paste makes a big difference but I even added twice as much of the Pataks red curry sauce and it still wasn't very tasty. I tried some garam masala on it and it helped a little.

Bread and Celery Stuffing

Reviewed: Oct. 13, 2009
This is really close to what my mom used to make but she added a can of cream of mushroom soup and used dried bread cubes for stuffing and added any old bread she had. It made it very moist and oh so yummy.

All Day Apple Butter

Reviewed: Oct. 11, 2009
I made a batch of this a while back and sent a jar to my daughter who said make more! I did add more cinnamon and cloves though since we love them and did 2 cups of brown sugar per other reviewers. It is very good and easy. The only thing I didn't like about it was it didn't make enough.

Honey Whole Wheat Bread

Reviewed: Oct. 4, 2009
very good and I love the light texture. I mixed it in the bread machine (I did add a little more honey) and then baked it in the oven 375 for about 25 min. My mom use to say when baking bread, "Bake it until it looks done and then 5 min. longer." It made 3 mini loaves. It was wonderful with apple butter. I will make it again.

English Trifle

Reviewed: Sep. 30, 2009
This is very close to the one I got from my friend's in England. The only difference is they use Angel food cake and you HAVE to put either Sherry or Brandy on the bottom layer of cake and let it soak up the booze to make it a proper English trifle . Depending on who poured it on in my family it was anywhere from 1/2 to 1 cup! Dad would add more.

Very good. Just like Mom made. I don't think she used Cider vinegar but it adds alot. A little sweet but that's how I like it.

Cucumbers in Cream

Reviewed: Jul. 26, 2009
I made this for my brother as a request for cucumbers and cream and not having a recipe turned to my favorite website. I don't like them so I didn't try them but they must have been good as my sister-in -law asked for the recipe and when my brother's ate them kept going YUM.

Pizza On The Grill I

Reviewed: Jun. 27, 2009
I have been wanting to try this for a while and glad I did. This is the best crust and worth the time. I mixed it in my KitchenAid mixer for a little over 4 minutes with the dough hook. I think a few people said to brush the crust instead of the grill, good idea, it caused flare ups so I let them calm down and brushed the crust. It took a little longer than I thought it would to cook though. I had all 4 burners on high, the temp on the grill said 500 when I put it on and I left them on high. I had everything ready in prep bowls to put on. I did close the lid and let it cook. I wish I would have timed it but had time to do a few things while it cooked. I used canned pizza sauce with some fresh basil sprikled on and pepperoni and cheese for toppings this time as a test (I think I'll make a chicken alfredo next time for myself) and split the dough into 4ths. I only did one and have froze the rest so I hope it will thaw and be just as good. It reminds me a lot of Space Aliens crust (a local ND, MN chain) so that's great. I have a Pampered Chef LARGE grilling spatula (about 8 inches wide) that works great to move these. It's a perfect recipe for people who like different toppings and would be fun for a BBQ with friends. Thanks for the great recipe.

Grilled Beef Gyros

Reviewed: May 25, 2009
This was fantastic. I made it camping, had everything made up at home and marinated the beef 2 days. I used a portion of a large roast I had cut in half. 5 people who have lots of different tastes, loved it (although a couple didn't use the sauce). The left over meat was great warmed up the next day too. I will be making this again and again.

Caramel Shortbread Squares

These are ok. The shortbread is a little crumbly, not sure what happened there. I don't know if I would make them again as they aren't that healthy and a lot of work.

Easiest Slow Cooker French Dip

Reviewed: Oct. 30, 2008
I add a package of Good Season's Italian dressing and 2 bullian cubes to my crock pot and more water (we like lots of dipping juice) and it's a family favorite. The cook that wondered about it being greasy, watch the roast you buy, a chuck roast can often be very fatty. You might need to get a different cut of roast.

Cranberry Walnut Bread

Reviewed: Sep. 22, 2008
THis was great. I can't stop eatting it. I let my bread machine mix it up and then I baked it. It made 1 large loaf and a small one. I think it would have overflowed my bread machine on a 2 pound loaf setting.
