I'm retired and working in a second career as a high school Science teacher.
My favorite things to cook
Anything Mexican; homemade lasagna(the more, different cheeses the better!); homemade, 2-day seafood gumbo (only two of my grandchildren, and none of my kids like this, so I hardly ever get the opportunity to cook it).
My favorite family cooking traditions
Southern New Year's Day dinner, including blackeye peas and ham hocks, cornbread, and all the mustard greens I can eat!
My cooking triumphs
I can whip up something delicious in no time, and without referring to a recipe, using whatever we have available.
My cooking tragedies
Every type of meat I cook on the grill ends up the same way! How would you like your steak? It only comes one way: third degree!

Chicken Enchiladas II
I made this dish for the second time tonight, and it is incredible! I added chopped cilantro (also called Chinese parsley or coriander) to the mix, and a can of Wolf brand chili with no beans spread on top, under the cheese. It was really good!

Yellow Squash Casserole
My grandkids hate squash, but they LOVED this. There were no leftovers.

Oven Fries II
I often cook potatos this way, but instead of olive oil, I use Kraft Italian salad dressing, a little garlic powder or garlic salt sprinkled over the potatos, and sometimes some fresh rosemary needles sprinkled all over.
