Lime-Cilantro Vinaigrette

Beautiful color, and I loved the fresh bite of the cilantro and the tang of the fresh lime juice and vinegar; however, I did not care for the sweetness from the brown sugar at all.

Southwestern Chicken

This spice blend does not require extra seasoning at the table (so some may think it is too salty). We froze bs breasts in this rub then defrosted/marinated for two days before sauteeing. This worked well for those who make meals ahead. Leftovers were also good, served on top of a SW salad.

Grilled Peaches and Cream

Riper peaches would work better for grilling. Ours were firm enough that it was difficult to remove the pit, so 8 minutes on the grill wasn't enough to warm through. We liked the honey and cream cheese topping, but added more honey to our plate. Served as a side to Hawaiian Chicken Kabobs.

Hawaiian Chicken Kabobs

Froze marinade and chicken cubes together a while ago then defrosted/marinated for two days. Delicious! Chicken skewers only (no pineapple). Grilled at 350-400F, 5min/side for perfect, juicy chicken.

Laura's Seafood Thermidor

I used all walleye, and it worked well! The combination of seafood would be good too (I'm sure), but in case you only have 1lb of shrimp or 1lb of fish... I would still recommend you give this recipe a try. Very rich dish. Salt and pepper added at the table made it perfect.

Very rich flavor for such a short cooking time. I subbed a quart of homemade tomato puree for half the beef broth, but otherwise made as directed. Makes six substantial portions.

Korean Spicy Marinated Pork (Dae Ji Bool Gogi)

Halved the recipe, and subbed 3T of Thai red chile sauce. Still plenty spicy! Pork slices (I used tenderloin instead of loin) cooked up in mere minutes. I cooked in batches, sliding done slices under aluminum foil to stay warm. Went well with Spicy Bok Choy in Garlic Sauce and takeout fried rice.

Spicy Bok Choy in Garlic Sauce

Half way through preparing the recipe I realized I didn't have Oyster Sauce, so I subbed equal parts Hoison Sauce and Black Bean Sauce (because both tasted good to me). Probably should have just used the BB Sauce because this came out a tad sweet (my fault).

New Orleans Corn Bisque with Smoked Sausage

My husband loves anything with smoked sausage in it, so this was a hit. I used fresh corn shucked off the cob which added sweetness. We also added 3/4t of Cajun seasoning instead of the salt. Frying up the sausage pieces would have been a nice touch too.

Too much meat, or too little pasta. Either way, this did nothing for us. Needs seasonings too - I added dried basil and oregano, but we still needed to add salt and pepper at the table.

Mom's Cucumbers

Cut the recipe for one seedless cuke. Didn't have salt (!!) or celery seed in the house, but somehow had celery salt. Worked well. Made one day in advance, and slices still had some crunch.

Winter Lentil Vegetable Soup

Even 1/4t of curry powder was too much for us! I added more chicken stock to dilute the curry flavor, and that worked well. This is a thick soup, more like a stew. Easy recipe for crockpot - 8 hours on low cooked all the veggies and raw lentils through.

Crunchy Pea Salad

I only used frozen peas and water chestnuts that I chopped up to match the pea size. Lessened the sauce since I left out three veggies and tossed to coat. Really tasty, fast side!

Jalapeno Garlic Tilapia Pasta

Made exactly as written this is a dry dish. Fish flaked apart in pan, which was fine. I removed seeds and ribs from the jalapenos, so not overly spicy. Leftovers were even more dry. Recommend doubling sauce or using less pasta.
